Any good recipe ideas for July 4th?

<p>Looking for some easy things to whip up for the fourth - any ideas?</p>

<p>Cheese tortellin or meat sausage whatever (warm, room temperature, or even cool) with pesto sauce. Pesto can be homemade or purchased (Trader Joe’s fresh pesto is wonderful). Leave as a vegetarian dish or add Italian sausage (chicken, pork, spicy or not) cut up (cooked obviously). Or add extra veggies (sweet red peppers, asparagus, mushrooms…whatever).</p>

<p>Lemonade Cake: white cake mix-bake cake, prick with fork-make lots of holes. Pour 1 can of melted frozen lemonade over cake, frost with cool whip and throw some blue berries on top. Light and refreshing.</p>

<p>Oh, and these are kind of goofy, but a tradition to make at our house:</p>

<p>Our traditional 4th of July snack are :
Bottle Rockets:
Green Onions, onion end cleaned and trimmed
Softened cream cheese
Very thinly sliced beef/corned beef - like that Carl Buddig stuff</p>

<p>Take some softened cream cheese (about a tablespoon). Form it around the bulb of the green onion till attached well. Take a slice of the meat and form around the end of the bulb-cream cheese as well. (hard to explain, but lay the meat out flat, stand the bulb in the center and then draw the meat up. Take a strand of the green onion stem and tie it around the top of the meat to secure. Eat the yummy onion-cheese-meat bulb - it’s your bottle rocket!</p>

<p>You can make a “flag” cake:
Bake a 13 X 9 inch sheet cake, any flavor.
Frost with white frosting.
Arrange blueberries and sliced strawberries or raspberries for the flag pattern.
Google “flag cake” for photos.</p>

<p>We usually have strawberry pie.</p>

JALAPENO POPPER APPETIZER</p>

<p>Couple changes from the original recipe posted below.</p>

<p>(Bake for 25 minutes at 375-
and, I used 1/2 cup Real Shredded Parmesan mixed with 1/2 cup Panko bread crumbs for the top -instead of the Parmesan Cheese, based on suggestions from posters)</p>

<p>"This is an easy cream cheese spread to make, and it tastes just like the jalapeno poppers you wish you could make yourself! </p>

<p>In pie plate, which has been sprayed with PAM.
INGREDIENTS:
2 (8 ounce) packages cream cheese,
softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies,
drained
2 ounces canned diced jalapeno peppers (I used 4 oz hot jalapenos chopped, and a couple of splashes of tabasco sauce, and it’s not too hot)
, drained
1 cup grated Parmesan cheese (SEE NOTE ABOVE)</p>

<p>DIRECTIONS:

  1. Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese. (see note above)</p>

<p>I tried something very similar to this a party. The person who brought the dish had sliced and then filled jalopenos with a cream cheese spread. It was delicious served this way too. It was served warm and it was not too spicy/hot.</p>

<p>My oldest son, who is now on ‘gap’ from college, but having great success at his job at Wegman’s…yes, my son is a grocery clerk and we are darn proud of him! :), informed me yesterday the ‘hot’ items from the ‘ready to cook’ meats department were marinated shish kabobs. The beef won out, but the chicken was a close second. He made some here at home, ready to grill when he’s off work tonight. Fresh bread, local corn, blueberries & strawberries will come home with him ready to go. There are really some perks to this ‘grocery gig’! :slight_smile: I get to enjoy the day.</p>

<p>I do make a tomato/basil/mozzerella pasta salad. Most people have their own version. I chop and deseed 3-4 large tomatoes, 1/2C EVOO, 3 fresh cloves minced garlic, 1/2C chopped fresh basil, 1/4C red wine vinegar (+/-to taste), s&p to taste, 1 1/2C diced mozzerella. Combine and let stand at room temp 1-5hrs. Add 1lb pasta (corkscrew, bowtie, penne). Rinse pasta before adding if serving cold. If serving warm the mozzeralla melts a bit which is nice.</p>

<p>SouthJersey, thanks. It looks good. The one I tried which had the jalapeno stuffed was also very good, and they made for good “pass around” food.</p>

<p>yes, the idea is that the dip tastes just like the “stuffed jalapeno” poppers served in restaurants, and apparently, at the parties you do to :)</p>

<p>Oh, okay, I get it now! Believe it or not, I have never ordered poppers in a restaurant.</p>
