AP Classes for senior year?

So I’m going to a new school for my senior year of high school, and I am going to register tomorrow.
My old school has 4 AP classes total while in the new school there is a huge abundance of AP classes.
At the end of the year I signed up for AP Gov and AP Chem. I am dearly afraid of AP chem because of what I heard about it.
For college/uni, I am considering majoring in economics and philosophy. So am considering to double up in math this school year with AP Statistics and a regular class. Should I do a different AP science class? Keep AP Chem? Or do a regular science class. I am going to apply to UChicago.
