I like to make things from scratch usually but since I live in an area where getting fresh green chilies and tomatillos can be challenging, I’ve found that you can buy some decent green salsas. I’m sure homemade is better but it would save you some effort.
I agree with @1214mom about minimizing stress. There are lots of quiche recipes that can be cooked ahead and frozen. Doing that with the yogurt/fruit parfaits seems like the easiest route to me. Also sending good wishes!

@deb922: If I recall correctly your wedding and mine are the same date – October 7. I too am having a brunch the day after, but it’s for around 50 people. I’m having a caterer prepare the food, which is freaking out my future DIL. She thinks it’s going to be very elaborate, which it’s not – it’s simply that I have neither the time nor the space to prepare food for 50 people.

My favorites are french toast strata and egg strata with veggies and meat.
These are very easy to make…you can prepare the ingredients ahead of time…assemble before you go to,sleep, and refrigerate. Bake in the morning.
Fruit salad, some bread or pastries, juices, coffee, tea…would be lovely.
A crockpot of steelcut oatmeal with a toppings selection would be easy.
Deb’s son is getting married the day before! Deb are you really going to want to be mixing up a casserole or slicing up veggies or browning me or anything - or worrying about bringing lots of stuff with you to the condo? I’d keep it as simple as possible - a local store/restaurant quiche, yogurt bar/parfaits, fruit , maybe some sliced sweet breads and special jam?
I used to host brunch frequently. Stratas are easy, and you can bring an aluminum pan and assemble pre wedding the day before, as they need to sit overnight. Google for recipes, bring a whisk if the condo has no blender. I am a fan of Mexican flavored strata with salsas and sour creme. Trader Joe’s has a decent green salsa. The only vegetables are canned green chilis and green onions. Fry some sausage or bacon and slice fruit.
Now you are making me think how I can host the guests in a similar way after the wedding this spring.
New Mexican green chile sauce is very easy to make and can be made ahead of time and frozen. The hardest part is getting the green chiles. (Unless you live in New Mexico)
Hatch green chiles are preferred, but Anaheims will do if that’s all you can get.
Here local suppliers will roast your chile for you. I buy a 35 pound gunny sack and have it roasted for me every fall.

- Blister ~20-25 green chiles all over on a BBQ grill or under a broiler. Stack blistered chiles on a plate/platter and cover with a damp towel. (Or place in a plastic bag.) Let them cool. Peel (the skins will slip right off ) & pull or cut off stem. Remove seeds if you want the chile to be less hot. (TIP: wear plastic gloves when peeling and seeding chiles. If you use your bare hands be sure to keep your fingers away from eyes and all mucus membranes until you’ve washed your hands very thoroughly with soap. Every year people end up in the ER because they peeled chiles bare handed then touched their eyes, nose or genitals.) Roughly chop peeled chiles.
OR Use ~2lbs of frozen & chopped green chile. (About 2-3 cups)

In a large saucepan, heat a 2-4 of tbsp of oil. Saute 1 large chopped onion and 2-3 cloves of minced garlic until softened and translucent.

Add 2 tbsp of masa harina or flour to onions/garlic and cook about a minute to make a white roux.

Add chiles to pot. Add 1 tsp salt, 1/2 tsp Mexican oregano, 1/4 tsp cumin

Add 2 cups of water or vegetable or chicken broth. Cook over medium high heat until slightly thickened.
Makes about 1.5-2 qts of green chile sauce.
You can freeze the chiles immediately after blistering and thaw whenever you’re ready to use them. They even easier to peel after freezing.
Trader Joes sells canned NM green chiles, but they are only fair substitute for the real thing.
Hash brown casserole with cheese, either with or without ham.
Baked French toast with a fruit and toppings bar.

I like the quiche and frittata ideas. The Costco ones are good but lots of grocery stores also have good options. Or for frittatas , you could do them in muffin

I’m in a rural area, the Costco and Trader Joes is 2 hours away. If I was close those would be great options but they are not. I have Walmart and Meijer available and neither of mine have much in the way of prepared foods I didn’t see any quiches there. To even buy decent bagels is an hour away from me.
I want to have breakfast available in the condo because my mom, my fil and my husband are hard of hearing (fil especially so) and restaurants are very hard for them. I’d like a nice comfortable area for the family to see each other and visit.
I’m aware that it might not be easy but it’s what I’ve got.
My mil offered to bring the fruit so that’s set. I bought 2 different kinds of local granola so I started there lol!
I found that my local grocery store, I can buy cut up onions and peppers and sweet potatoes so that helps. I’m thinking if I buy food prepped as I can, putting it together shouldn’t be too hard.

I think the fresh fruit from the MIL, the local granola and some small containers of yogurt will be fine.
If you want to do an English muffin consider an online order from Wolferman’s. I would buy an extra toaster and drop it off at a charity the next week.
Post #35 tells the others on this thread that their ideas are not reasonable for your event.
Well scratch that. I’m an idiot sometimes. I checked the check out time and it’s 10 am. I thought wrongly that the check out would be noon like most hotels but no.
I’ll check out the hotel/condo restaurant and maybe we can find an area that’s more private.

I thought the condos were such a good idea and I couldn’t find a house big enough to rent so I’m renting several condos. The check in time is 4, the rehearsal dinner is at 5 and a 1/2 hour away. Ugh!
