Do they care about relevant ECs? I am prez of the investment and economics club for our school and am participating in a mentorship under an economic consulting firm. Anyway, here are my stats. From my understanding, I meet the minimum requirements set (5 5’s), but I was wondering if all that I have only pushes me beyond the “minimum” mark or if this is just expected with the caliber of applicants. Chance me?

You don’t say what course (and that is relevant), but assuming Econ your BC score is a plus. Your PS will be where you link in your ECs, but expect to go beyond 1 school club and an internship: demonstrate why that specific course is a fit for you. Read the info online carefully- about the course and about writing your PS- before you write it. Remember that the purpose of the PS is to make the academic case for you being suited for the course…

You look like a strong candidate for econ or finance. To bolster your application further, do you have the option of taking a dual enrolment class for Calc II? (Many although not all UK applicants will have Further Mathematics A level.)
I see a couple of years ago you were thinking about possibly being premed. Is that off the table now? Because if med school is still in your plans the UK will not work for you.
I can always drop my stats class for a duel enrollment Multivariable Calc class. Would it be worth even tho I would be losing an AP score?
Yes, MVC is a much better choice than Stats, since some of the MVC course is part of Further Maths A level. You have met the minimum number of AP 5s, beyond that it is better to have more advanced (relevant) courses than more APs
@Twoin18 in my application, will i only be able to list 5 APs that I got a 5 on, or can I list all of them? and sounds good, ill switch to MVC
You MUST list them all - you need to sign off the application saying you have included all your standardised tests.
