Do I have a good shot? Should I retake the SAT? Which SAT IIs should i take?

I would assume Dean J doesnt do chances (correct me if I am wrong).

But Ill give it a shot. You are a good candidate, but the problem is u r OOS and that makes it difficult. If you think you can raise ur SAT take it again, Try the ACT.

I would take the SATII that you think you are strongest in in diverse topics, prefrably related to your major. For example if engenerring I would do physics, Math II and one history/language.

Good luck!

Thanks. Any other opinions out there?

Definitely retake the SAT. It's too low as is your GPA. Is it weighted or not? What's your rank? Are you a junior? At this point your chances are low.
