<p>I don’t have a recipie per se but this chicken salad is my specialty:</p>
<p>Diced chicken
Diced celery
Mayo
Dijon mustard
Salt
Pepper
Cashews</p>
<p>For the chicken you can poach breasts or make a whole chicken if you like darker meat in the salad.</p>
<p>Mine, very simple:</p>
<p>Poach chicken breasts (30 min.) in water and cut into cubes. Thighs, too, if you want some dark meat. Boneless is easier, bone-ful cheaper and results in better soup (a by-product), as does using some dark meat.</p>
<p>Dressing = 1/2 mayonnaise, 1/2 sour cream, lemon juice and pepper/salt to taste. I use about 1 lemon to 1-1/2 cups dressing to 6-8 breast-equivalents. Sometimes I put some fresh tarragon in if I feel like it, but that’s a pretty strong taste and changes the character.</p>
<p>Celery and grapes cut in half, in whatever proportion you like.</p>
<p>Let sit (refrigerated) for at least a few hours.</p>
<p>Make soup with the water you poached the chicken in, especially if you can put the bones back in and some onion/carrots/parseley and simmer it down for a while.</p>
<p>My mom’s fabulous cs is the same as JHS’s, minus grapes add lots of green onion and green olives, chopped. I prefer all mayo. Yum!!</p>
<p>I want the Elsie’s Chicken Salad recipe. It was a Harvard Square Staple. It really was simple, but I’m guessing it must have had whipped cream or something in addition to the mayo. I like the variations with a little bit of curry powder too.</p>
<p>Mathmom: Elsie’s used half Miracle Whip and half sour cream, if I remember correctly. I could be thinking of someone else’s formula. But that’s a good one.</p>
<p>My favorite chicken salad is the chicken meat from a rotisserie chicken from the grocery store (notice I don’t even cook it myself, this is a VERY lazy recipe) (although I do boil the bones to make broth), sliced apples (preferably Fuji or Honeycrisp), poppy seed dressing, and maybe (if I have some) some bits of fresh sweet red pepper for color.</p>
<p>Boil chicken breasts in chicken bouillon; chop</p>
<p>chop green onions and celery (sorry I don’t have measurements)
sweet pickle relish
1/2 mayonnaise, 1/2 sour cream
finely chopped pecans
salt and pepper to taste</p>
<p>Serve on croissants</p>

<p>That’s certainly plausible. I think part of the secret was there was lots of dressing. I don’t think it had anything besides celery did it?</p>

<p>Mine uses celery, onions, raisins and pecans. And rotisserie chicken. Served on croissants.</p>

Dash of Hot sauce</p>
