Cooking With A Tagine

I was shopping with my 83 year old Moroccan mother this weekend at HomeGoods. I spotted a tagine - a stoneware piece that I became familiar with on a recent trip to France with her to visit family. I and she, was so excited when she saw it! She does not have one but remembers her mother having one when she was a child.

So since I rarely have a good Christmas present for her, I snuck and bought it. I would like to now print out a few recipes that do especially well in a tagine. I know stews, soups, roasting veggies, right? Along with the pot, I will put the recipes in a binder for her (how she prefers to look at recipes).

Anyone have good tagine recipes to share/link??? TIA!

I see she has a paperback one out, too, with “easy” in the title.

I honestly haven’t tried it myself for a combination of reasons, but we’re looking forward to cooking with it.

Also, just as a note, my friend also told me that if you have gas burners you need to get a diffuser - it looks like a little metal plate that fits over the burner.

FYI, @abasket, Williams-Sonoma stocks a couple of types of tagines and has several recipes on their web site.

^^Yes, I actually linked in the original post to a WS one - I already purchased another brand but will take a look at their recipes online.

Yum! When I was in Morroco I ordered something cooked in a tagine whenever possible. I love anything cooked with apricot and/or raisins etc, love the sweetness.
