Picked up a pizza and salad tonight.
I did make a batch of granola for the week. Oats, cashews, pepitas, sunflower seeds, pistachios, unsweetened coconut. I vary my sweetener and fat from batch to batch. This week I used maple syrup and coconut oil. Seasoned with cinnamon and nutmeg. Added some dried cherries after it cooled. H and D will use it with yogurt this coming week.
I learned about garlic scapes last year - delicious! I made a great garlic scapes pesto - hope I can find more this year!
Wow, thanks, DrGoogle! That sounds delicious!
Today was kind of a lazy day. It’s Saturday so DH made waffle batter. I put blueberries in it and had pancakes. Lunch was opening day at the local farmer’s market and the local Caribbean/Soul Food restaurant rolled over their smoker. Dh, S2 and I shared brisket, ribs and jerk pork. All delcious. (Sides were mac and cheese, collards and coleslaw.) DH had a local craft beer but they were all too sour for me so I had ice tea from another vender. For dinner we’d considered going to the local vegetarian restaurant which was featuring some singers we’d heard before, but it was standing room only so we stayed home and ate leftovers. Two ground meat dishes - one with a chipotle sauce the other a mole, the black bean salad from Molly Katzen’s Still Life with Menu and two left over home made salsas - one with mangos and the other a cherry tomato one. Both with lots of cilantro. Wine was a Spanish garnacha. Dessert was home made choc chip cookies. Not bad.
Dover sole baked and served with butter sauce… Green salad and TJ barley and veggie mix on the side. Yummy. Glad I bought 2 packages of it!
DrGoogle, I will make your cake tomorrow!
Need to make a store run for some stuff. No worries, I do not measure the ingredients precisely either. Thanks again!
With the kids home for the summer and different hours and tastes I made a homemade marinara sauce to keep in the fridge. I have tortellini in the freezer and meatballs and pasta in the pantry so if anyone wants to feed themselves or friends it can be whipped up in less than 15 minutes.
Just back last night from S’s graduation and there is no food in the house and I’m too tired to go marketing but bookmarking as I love cooking/food threads, too.
I’m braising a brisket for lunch on a crockpot. Last night I was too tired and just make lobster with butter sauce. Seafood is easy to cook, very fast, 10 minutes max. I got them on sale from Albertsons $4.99 per lobster tail.
^^^^Jealous of that price!!! (and that you got to eat them!)
It’s small not big but I also had $10 coupon if I buy $50 so I ran out of things to get, especially I just used another $25 coupon for $75 spending. My fridge is full.
The weather hit 105+ this weekend, so I made lychee/lavender popsicles! I’m becoming a popsicle fiend these days.
Dinner was blackened salmon served over ramen noodles tossed in a spicy thai chili sauce, with leftover brussel sprouts in a caramel fish sauce on the side.
I didn’t know you can eat lavender. I use them in my bath tub.
@DrGoogle You draw the lavender like a tea. It adds a beautiful fragrant element. It’s nice in infused vodka cocktails too. In theory you could use most any lavender, in practice it’s best to buy culinary-grade lavender.
I have tons of lavender bushes in my yard. They smell so nice that if I brush them in the morning, I immediately don’t have any headache.
You mean the dried flower or the leave. Sorry I’m not a tea drinker.
On my second dish, beef ratatouille, kind of of like the vegetable version but with added beef. I can store some of these in my freezer for future meals.
You use the flowers for cooking. Fresher is better as they lose the fragrance pretty quickly. For my ice pops I bring the water to a boil, add the lavender (2-4 tbs per qt), simmer for 5 minutes, then strain.
^^This is our first year planting sugar snap peas. We already have a few pods, but will wait till they grow more before picking them.
We had company this past Sat. eve and I made a very, very easy dessert using Pillsbury pre-made cookie rolls.
2 rolls of Pillsbury Choc. chip cookie dough on the bottom of a 9 x 13 inch pan, then a layer of reeses pb cups, then poured over the top a supreme brownie mix with choc. sauce folded in…they made amazing brownies. (Brownies came from a Giradhelli package). Omg, they were good, but very sweet.
On my third dish, sweet onions with oyster mushroom quiche. I had to use the left over cheese we serve guests Saturday.
Costco pork roast (from the 4 pack) into the crock pot with pineapple juice, then tossed in a bit of brown sugar, green salsa, squirt of ketchup, worcestershire, etc. Simmered until it shredded, some of it we used on quesadillas, going Mexican in flavor, some I put in with BBQ sauce heated & served on a grilled bun with a thick slice of bleu cheese & some grilled onions.
Chiles rellenos, queso fresco & jack cheese in poblano peppers topped with homemade ranchero saice, yum
