#Cookingathome - What Did You Create Today???

Dawned on me earlier today that it was nice to have a Saturday that wasn’t so fully packed that I could prepare some delicious food. Nothing fancy, but indeed delicious! :slight_smile:

For breakfast, we have croissants, fruit and some scrambled eggs with some an AMAZING spicy sun-dried tomato/pepper relish I bought at the farmers market. Ok, so not so much cooking there, but I make some mean scrambled eggs!

This afternoon I made a recipe my daughter pinned on Pinterest - parmesan tortellini bites - tortellini cooked, tossed in egg, flour and panko and then lightly fried in a little oil - they were delicious! Again, not hard, but delicious dipped in fresh marinara with some raw veggies on the side.

Just now, mango salsa. Chop, chop, chop, of fruit, veggies, herbs and a swish of lime and olive oil and we have great mango salsa to snack on with some chips or to go with the pork roast I put in the crock pot.

Eating out is great - at times. But cooking at home…another form of satisfaction!

Your menu sounds great, abasket. I see mango in our local market, but don’t know what to do with it. Your post inspires me!

At our house: Gazpacho – Andalusian style. We did a trip to southern Spain two months ago, and I’ve been waiting for a free Saturday to try it myself. It wasn’t that hard. Served it with herb/goat cheese crostini. Topped the soup with grated boiled egg and bits of chopped bacon. We enjoyed it. I announced I will make it once a week during hot weather!

I went to the grocery store, does that count?
I shopped for a short camping trip we are taking next week.
Except I used the note app on my iPhone, and it erased my list!
I need a new app that at least asks if you want to save changes.

Mango salsa is good, have you tried adding mint?

I haven’t cooked much today ( Evernote is a good idea, I always forget to use it)
H works this weekend, so he is only home for dinner. I made pasta salad.
I also am planning to host D & BF, while we are camping. I learned last year that they are eager to spend time away from their home base.
This time, I will be prepared. I’m planning on hotdogs, but I bought * really* tasty ones.
Hemplers uncured beef franks & Montana wheat buns. Then I will probably make a potato salad at home to have with it. ( they don’t have meat very often)
Although I also have some blue cheese and toasted almonds that would go good in a green salad.
I don’t like to spend lots of time cooking when we are camping, but I love to eat!

We got our first snow peas from the garden. I sauteed them with garlic, fresh rosemary, and wine. It was delicious.

I’ve not enjoyed eating out lately.Sick with the same old stuff. I did a coconut almond flour fruit cake and it was surprisingly delicious. Very moorish if is such a word. I think it can be served with custard and would go very well with tea. No recipe, I just threw everything together with my frozen bananas as the binding ingredient. A little bit singed on the edge.
We had guess over from overseas so I made egg sandwiches with watercress. I also served fresh organic strawberries. Simply delicious.

Nice!!! Everything!!! I love sauteed snowpeas - a staple at our house thanks to the Costco big bags. (much tastier though I’m sure from your garden!)

Didn’t cook, but local strawberries are now in season…ate a whole box.

@abasket - I love snow peas. I like them blanched and then chilled. I make some kind of dipping sauce - like sorcery and horseradish

We had a very bountiful asparagus harvest the other day so today I made asparagus soup. Tasty!

Trying to figure out what to make for dinner without making a store run. Guests are coming, but there will be more of them than we planned to host.

I made a pizza with a batch of dough I had leftover unbaked from yesterday’s pretzel making.

We ran out of Pina Colada mix so I “created” some from scratch. I’ll never use a mix again. SOOO much better, and just as easy.

Omg, I was just going to say that I didn’t cook today, but I made two sunset passion coladas for myself after having one at dinner last night and becoming a little obsessed by how good it was! I used cream of coconut, pineapple juice, Malibu rum, shaved ice, and a pour of puréed strawberries on top.

Defrosted some smoked lamb that H had made a while back and served it with brown rice and stir-fried some Shanghai cabbage and garlic. It was delicious, especially served with mint jelly!

See, you people are creative!!! Asparagus soup sounds delicious! And the drinks!

BB, yikes, more people than expected - hope it worked out!!

@BunsenBurner , here is what I have for the ingredients:
1 egg
4 frozen bananas defrosted
1 bag of dry coconut from Sprouts
1 cup of almond flour
1 shake of baking powder
1 drop of vanilla
1 bag of sultanas
1 large bag of large yellow raisins from Sprouts
1 small bag of dark raisins
Small shake of salt
2 tablespoons of Palm sugar
1 4 Oz of butter melted at room temperature

Put in a big bowl and mix. Pour mixture in a Bundt cake tin.
I don’t ever measure anything so this is what I remember.
Bundt cake tin cooks the cake evenly in the middle and you can leave it a bit longer for singing.
Bake at 350 degrees until it smells really good. Turn off oven, let it rest in the oven for a few minutes, maybe 5 or 10 minutes. Check that it’s brown on top.
Again, I don’t follow recipe ever. Sorry it can’t be as exact, the list above is estimated only.

Garlic is growing like crazy so we made carbonara pasta and added garlic scapes. Also made a salad with lettuce from our container garden. The best!
