<p>So, as an offshoot to “are you a good cook”…for those of you who said you were, what exactly did you cook for dinner last night? I’ll start: Remember, I’m the Queen of 30 Minutes Dinners… we had broiled salmon over wilted spinach and fresh garlic cloves with a side of broiled turnip fries, decaffinated green ice tea with lemon. 20 minutest start to finish, very low carbs and probably less than $5 pp.</p>
<p>I didn’t cook last night but Wednesday night I made beef stew and sautéed zuc. About 15 minutes to prep but two hours to cook. </p>
<p>Well last night son who is a first year teacher had the kitchen occupied (TOTALLY) making inception cookies for his students last day of school today so no room for dinner prep - so dinner was a thin crust (lower carb!) pizza and a bowl of baby carrots with ranch dip! No judging…</p>
<p>So if I could default to the night before…dinner was turkey breast portions pan browned and then baked, broccoli and smashed potatoes with fresh herbs. (smashed = leave the skins on small red potatoes, cook till soft, then use masher, no mixer and add butter/salt/milk and fresh herbs at the end). </p>
<p>Chicken parmesan, sort of: </p>
<p>Boneless chicken breasts, flattened and each cut into three pieces.
Dipped in milk, then flavored breadcrumbs, and browned in olive oil.
Put in oven dish. Covered with half a can of tomato sauce, then ample amounts of grated parmesan cheese.
350 F oven for around 25 minutes.
Served with salad. </p>
<p>DH was happy, and that’s typically my goal. </p>
<p>I did not cook anything. I had a chirashi bowl at my local Japanese izakaya. But tonight it’s left over flank steak and steamed broccoli. I’m saving all my cooking powers for the big day.</p>
<p>Not last night because I attended an office party late yesterday afternoon and wasn’t hungry, but the night before-- roasted rack of lamb (first skillet browned then coated with rosemary & garlic bread crumbs), baked potato and spinach sautéed w/garlic.</p>
<p>The rack of lamb is quick to cook (takes about 25 minutes in the oven). </p>
<p>Tonight’s dinner with be homemade lasagna and a green salad. (Lasagna is from a big batch I made earlier in the fall and froze.)</p>
<p>Seasoned pork loin chops on the grill, honey drizzled baby carrots and salad. </p>
<p>Orange Teriyaki Chicken, brown rice, caramelized broccoli, sweet potato fries. It was D’s first night home for break & she was craving some healthy, non-dorm food.</p>
<p>Last night we went with anything that’s worth eating once is worth eating twice. Warmed up previously grilled steak, steamed some brocolli which I had some left over tahini sauce for and made a salad. Nothing very exciting.</p>
<p>I bought a roasted chicken from Sam’s , pulled the meat off, put it in a large pot with chicken broth, black beans, cannellini beans, corn,diced tomatoes and salsa verde. I heated it up and served it with chips and shredded cheese.</p>
<p>Penne mixed with Chicken/roasted asparagus/sundried tomatoes in oil with pine nuts and paremsan cheese. Oh…wilted spinach in it, too.</p>
<p>Well, now I’m ready for lunch lol. Not too exciting, same thing almost every day ~ salad.</p>

<p>I was never a cook because my ex used to do it. Just so happen my brother came into town, so I grilled a steak and Madagascar shrimp, mashed potato, gravy (bottled) and spinach. </p>
<p>Neighbors dropped by for drinks and ended up staying for dinner. I served leftover spinach quiche and salad with a cheese plate for dessert. It’s what was in the refrigerator.</p>
<p>I am not a good cook. I’m a pretty decent hostess. </p>

I think that will be my “cheat” on Christmas Day. Or…if I can find a restaurant that serves warm gingerbread with vanilla bean ice cream. Ya, that salad for lunch just didn’t cut it lol.</p>
<p>left over and frozen bone in pork chops with a peach glaze. Warmed up nicely.
Otherwise, as I was not hungry, H finished the green bean casserole from Honey Baked Hams.</p>
<p>Tomorrow I will attempt my first Pork Ribs on the Bone with an herbed crust, au gratin potatoes (unless I make my fennel and potato gratin), salad and cheesecake factory cheesecake.
Lots of wine.</p>
<p>For Sunday night I will sautee scallops (which I dislike) and also make a grides mi feta (SP?) over rice. It is a prawn dish. And salad and bread. </p>

<p>Homemade mac & cheese and kale caesar salad. </p>
<p>Tomorrow is Hanukkah party with friends. Latke’s of every variety. </p>
<p>Caesar Salad (homemade dressing and croutons). spaghetti and meat sauce. Son came home from college, and this meal is his fave.</p>
