Easter pot luck ideas

<p>The hostess will make a ham. Can you suggest some a main dish that can be made in a fairly large quantity to compliment the ham?</p>

<p>I love a good macaroni and cheese! It goes well with ham and is perfect for the little ones, too.</p>

<p>Being typical midwesterners, we would have a green bean casserole (traditional recipe) with that ham and cheesy potato casserole.</p>

<p>My aunt makes great pesto mashed potatoes. It’s basically, however you would normally make mashed potatoes, and then she swirls in the prepared pesto that you buy in the refrigerator section at the supermarket. It’s delicious and a little different! You can swirl the pesto or mix it all up but then the potatoes are all green, so it depends on how adventurous your family is as far as foods. You can also put the mashed potatoes in a crock pot, and then just plug them in when you arrive so they warm up and it’s easy to transport back and forth.</p>

<p>As someone who is allergic to nuts, things like pesto mashed potatoes are what scares me…nuts hidden in something that is supposed to be safe. (But they sound terrific!)</p>

<p>I like the idea of macaroni and cheese. My favorite is when I use up all the odds and ends of cheese that we have in the house.</p>

<p>If any of you have never had carrot souffe, it’s fabulous.</p>

<p>But I use canned carrots and puree in the food processor.</p>

<p>Easy bean dish…
1 can light red kidney beans, 1 can garbanzo beans,1 can small butter beans, 1 can of lima beans,1 small can sliced water chestnuts (drained),ketchup,dijon mustard,worstershershire sauce, brown sugar.
1 green pepper chopped,one onion chopped</p>

<p>In a big pot…
Cook peppers and onions in a little water til softened.
Add (drained) cans of beans and water chestnuts</p>

<p>In a separate bowl mix together…3/4 cup ketchup,1/3 cup dijon mustard,1/3 cup brown, sugar, 2 tablespoons Worstershire sauce. Pour this mixture over the beans and heat until warm. This recipe can be done in the microwave too.</p>

<p>Makes enough for a crowd. Everyone loves these beans.</p>

<p>Here is our family favorite:</p>

<p>Hashbrown potatoes and cheese</p>

<p>1 bag diced frozen hash potatoes
1 -16oz carton of sour cream
1 can cream of mushroom soup
3 oz cream cheese
1/2 teasp garlic salt
1/2 teasp salt and add pepper to taste
3/4 cup shredded cheddar cheese</p>

<p>Mix together hash browns, sour cream, soup, cream cheese , salts. Top with cheddar cheese. Bake in 9x13 pan at 350 for 1 to 1 1/2 hours. (serves 6-8) </p>

<p>Note - for our family we use 3 pans for 23 people</p>

<p>Sweet potato casserole topped with brown sugar and pecans is also a great side dish for ham.</p>

<p>I’ve never made mac n cheese (except the kid type out of the box…lol). I would LOVE a good recipe.</p>

<p>How about a stratta? I started a thread about stratta a while back, and there were some great ideas from our CC cooks. Eggs and ham go together so well, and with a stratta, the eggs are made the night before, which makes it very easy for a crowd.
For Easter brunch, I’m serving stratta with cheddar, mushrooms, and asparagus, as well as serving ham, a green salad, a melon salad, and a raspberry trifle for dessert.</p>

<p>moonchild, I am embarrassed to say I never heard of a stratta until your thread. And having read what you’re serving for Sunday brunch, I’ve this idea of bagging my friend’s pot luck and inviting myself over to your house.</p>

<p>Mac-n-cheese is always a crowd fav. I make it from scratch but don’t measure anything so can’t post a recipe. </p>

<p>What I have learned that makes a big difference… Do not buy the already shredded cheese in a bag. Buy a block of cheese and shred it yourself.<br>
I used the shredded cheese to save time at Christmas. My mac was not nearly as good. Then I read online that the shredded cheese has some sort of coating on it to keep it from clumping up in the bag. It just doesn’t have the same great melted consistency (or taste) as block cheese.</p>

<p>We always add Kielbasa as a compliment to the ham…also deviled egss and pierogies…</p>

<p>DD found a cute way to do deviled eggs by making them look like little chicks. Instead of cutting lengthwise cut the top off the hard boiled eggs. After taking yolks out, deviling and re-filling, put top back on and add olive pieces for eyes and carrot pieces for little beaks.</p>
