Extra AP for Senior Year?

My planned schedule for senior year is:
AP English Literature
AP Government
AP Statistics
Physiology and Anatomy
Cooking

i thought these were the classes i was going to take because its all i needed. i didn’t need to have a full schedule for senior year, but someone suggested i take an extra easy AP class. They recommended me to take AP Human Geography which has a reputation for being easy, but i don’t really want to take it if it won’t make a difference. Will colleges even care if you are taking an extra AP class for senior year?
Will taking AP Human Geography make a difference? I heard colleges accept you based on your sophomore and junior year grades anyway. i have about a 3.7 GPA unweighted so far.

I’ll be taking AP Human Geography online in my senior year: gpa boost, helps my rank, and shows interest in my future major.
