I too recently had my first avocado toast experience. In addition to avocado, it was topped with marinated grape tomatoes, feta, and toasted pine nuts. Yum!
I love toast this way -
two slices of warm toasted home made peasant bread
lightly slathered with homemade mayo
3 slices warm cooked bacon
2 fresh romaine lettuce leaves
sliced beefsteak tomato fresh from my garden
served with a homemade dill pickle and kettle cooked potato chips…
^^ Yes, delicious - but otherwise known as a sandwich, right?!! 
Some folks call it a BLT, but the toasted peasant bread it what makes it special 
I love tomatoes on toast in the summer. Thick slab of tomato, seasoned with salt and pepper, or a Penzey’s blend like “sandwich sprinkle”. Plain ol mayo on the toast, or a smear of mild French dijon. Very simple and good!
We have a local breakfast place here called “Toast”. I though, how good could that be? But it’s good! They use thick and delicious bread made on site and have interesting combos - honey, proscuitto and ricotta - avocado and sunny side egg - cream cheese, cured salmon and scrambled egg, etc. Yum.
We also love our little avocado saver. Pit out, cut side down, and close the lid. Store in the fridge. There’s very little browning.
If you’ve ever been to Disney World, there’s a heart attack on a plate known as Tonga Toast.
I’ve never had this version, but the original is phenomenal.

Tonga Toast
Serves 4
Ingredients:
Sugar-Cinnamon Ingredients:
3/4 cup granulated sugar
2 teaspoons cinnamon
Batter Ingredients:
4 large eggs
1 1/3 cup whole milk
1/4 teaspoon cinnamon
1 tablespoon granulated sugar
Tonga Toast Ingredients:
1 quart canola oil, for frying
1 loaf sourdough bread (uncut, 12 inches long)
2 large bananas, peeled
Instructions:
For cinnamon-sugar:
- Mix sugar and cinnamon in medium bowl (large enough to roll toast) with a fork until thoroughly blended. Set aside.
For batter:
- Whip eggs in medium bowl (large enough to dip toast) until well beaten. Add milk, cinnamon, and sugar. Mix well and set aside.
For Tonga toast:
- Preheat oil to 350 degrees F in a large pot or a deep fryer. (If using a large pot, use a candy thermometer to make certain the oil does not get any hotter or it will burn.)
- Slice the bread into four three-inch-thick slices.
- Cut each banana in half crosswise, then each piece lengthwise.
- Place a bread slice flat on the counter and tear out just enough from the middle (do not tear all the way through) to stuff half a banana into; repeat with each bread slice.
- Dip stuffed bread into batter, covering both sides, allowing excess batter to drip off bread and place carefully into hot oil.
- Cook 4-5 minutes until golden brown. If needed, turn toast over after 2 minutes and cook for another 2 minutes on other side. Remove and drain excess oil.
- Roll toast in cinnamon-sugar. Repeat for each piece of toast.
I sometimes sprinkle a little bit of avocado oil on the bread along with some oregano and garlic powder. Place spinach leaves with slices of grape tomato on top. Flavor with some lemon pepper. Sprinkle a bit of shredded cheese on top with more oregano, coriander leaves, and red pepper. Heat in the toaster oven till the cheese gets all nice and bubbly. I prefer savory over sweet.
I have had Tonga Toast. It is delicious! Thanks for the recipe. I would substitute heavy cream for the whole milk.
We love the tiny avocados from Trader Joe’s too - only $2.99 for a bag of six and each is the perfect size for one person. Love mixing the avocado with lemon juice and 21 Seasoning Salute (also from TJs), and spreading on multi-grain toast, then topping with either smoked salmon or an over-easy egg. I also leave my toast in the toaster to cool as I hate the soggy/moist bottom. Good to know that I am not the only one!!
