Perhaps this should go in The Bragging Thread, but today for lunch I had nine different kinds of vegetables. Colorful and delicious. Please clap.

@Youdon_tsay - what did you eat? I would love to know.

I make oven-roasted veggies that I just love. Super easy.

Basically, carrots and garlic in a baking dish with a little olive oil and salt and coarse black pepper. Then I put a pinch of sugar on them. Seriously, between the salt and pepper and sugar we are talking maybe a teaspoon total. I don’t like a lot of salt, and you only want the sugar because it caramelizes. Bake for 20 minutes at 400-425. Then I add all the other veggie – four kinds of bell peppers, onion, squash, zucchini, broccoli. Whatever I have on hand. I toss and add a bit more olive oil and pepper and then cook it all at 350 for an hour or to whatever doneness you prefer.

We’ve added these to the T’giving table when we are not with my extended family, who definitely are the green bean casserole types and wouldn’t love the fresher veggies. I make a homemade teriyaki sauce to go with grilled chicken and basmati rice with the veggies. This is my lunch most days.

I found this old pic that’s not the best, but it gives you an idea of how it looks. These veggies def are a couple of days old judging by how wilty they are, and this looks like only peppers and onions.

OK, I know this is the exercise thread, but any chance you’ll share the teriyaki recipe? Our favorite brand (Kona Coast) is getting hard to find, and I haven’t found another I like nearly as much.

Dh made me write down a recipe finally. I used to do by taste. This can be doubled.

1/4 cup honey
1/4 cup olive oil
3 Tbsps soy sauce
Garlic powder to taste

Anyone here has a GiBoard? Are they helpful with balance exercises or is it just the influencers’ hype?

That reminds me that I have something like this in the closet. ($5 purchase from NextDoor…. I tried it a bit last year but was not using it much.) Any suggestions for best uses? I was thinking maybe I should try doing my regular hand-weights video while balancing (with the hard/flat side up).

That is pretty cool and also its a beautiful piece of equipment! Cool that it’s made of wood.

Such a good point that we “take care of” so many part of our bodies through fitness - arms, core, legs, etc. - but we just expect our feet to take it! Feet need attention too.

My trainer is so into strengthening ankles. I’ve never seen anyone who emphasizes it so. We do a lot of single-leg balance stuff.

I would love a Bosu ball, but this is so much less bulky. I might put it on my Christmas list.

Ten years of yoga and my balance still stinks! I think this MOBO would be helpful for me.

It is challenging and frustrating at times, but I have found it to be a relatively affordable tool. The other thing I really like are the videos of the suggested exercises at no additional charge. It can be as easy or as difficult as you want it to be - it meets you where you are.

Random question - does this damage your floors/carpet? Where do you use it? Thanks

I typically use it on a hardwood floor and haven’t had any damage. I’ve used it several years. I’ve also taken it to my gym and used it there - not sure what that surface is but again, no issues.

@Colorado_mom - I stand on flat side of Bosu ball at gym and do squats (bending knees so thighs parallel with ground). A guy at gym told me it’s more challenging if your feet are wider apart and you go deeper into the squat.

I’ve been hoping this strengthens me for skiing…as well as balance…!

Still training for the Elliptical Olympics. Down 143.2 lbs since 2/7/24. 13.3 lbs from goal, which I was planning on hitting at the 1 year mark.

What I have done is 1 hour of elliptical every day. M-F walk 3 miles at lunch. Slowly adding weight lifting. I only skip the elliptical if I am traveling which probably has been 10-12 days over the 304 days from the starting point.

I am not a calorie counter. I just know most days range from 1400-1800 calories. Since we are empty nesters. One totally gone and one in college. We tried out that prepared meal service Factor. We do 4 dinners a week on that. We love the convenience as we both work. We love the portion control. We don’t love the cost.

Did a purge of the closet. Got rid of a lot.
