Flip My Leftover!

<p>getting back to the premise of abasket’s original post,</p>

<p>“Here’s the deal - you post your leftover item - meat, a vegetable - whatever and CC’ers will give you an option of how to reinvent a dish out of it. A main dish, dessert, side - ANYTHING!” </p>

<p>So…I have an excess of cottage cheese (made lasagna and the tub at Costco was cheaper than if I’d bought the right amount at the local store). So…any ideas on how to re-purpose/re-invent this item?</p>

<p>^I’m eager to see replies as I have some farmer’s cheese which is similar but smoother. I got it because my mother’s meatloaf recipe calls for 1/2 cup of cottage cheese or something similar. So that would be my suggestion to you. Unfortunately lasagna is out as dh won’t eat pasta.</p>

<p>I’ve used cottage cheese in place of ricotta to make stuffed shells (large shell pasta + a mixture of egg, mozzerella, ricotta or cottage cheese, parmesan, salt, pepper and fresh parsley and topped with marinara)</p>

<p>BUT, I also have this recipe that was a childhood favorite and what my mom always did with extra cottage cheese - think “healthy” cheesecake as a pie.</p>

<p>Cottage Cheese Pie</p>

<p>2 T. sweet cream or milk
1 1/2 c. cottage cheese
1/2 c. sugar
1 T. butter
1 tsp. vanilla
3 eggs
Homemade or store bought pre-made crust</p>

<p>Mix all ingredients except crust by hand (with whisk ok, but not with beater). Pour in crust. Bake at 400 for about 30 minutes. Serve by itself or with some fresh room temperature fruit like cooked apples, peaches, fresh raspberries, etc.</p>

<p>This layered jello dessert is a good use for cottage cheese.

<p>Leftover baked potatoes can also be refrigerated overnight and the next day the skin peels right off. They can be cubed and quickly sauteed into home fries with a crispy exterior and tender, flavorful interior.</p>

<p>I really like to put cottage cheese on baked potatoes.</p>
