<p>Oh, thanks for understanding what I tried to say. I did not mean to criticize the use of olive oil in your recipe. I learned the hard way about the possible strong flavors of extra virgin oil. For instance, homemade mayo with EVOO does not taste very good.</p>

<p>I don’t know this for a fact, but there is a restaurant chain here in Chicago (Portillo’s) that has a very famous chocolate cake and I have heard the secret ingredient is mayo.</p>

Bread dough would likely have part white, part whole wheat flour, a bit of honey, maybe an egg or some semolina flour.</p>

tonight I made a pasta with lots of substitutions. Sort of pasta with vodka sauce, except I used white wine instead of vodka and I used sour cream instead of cream. Not really “Italian,” but it was actually pretty good and it used what I had on hand,</p>

<p>Sour Cream Coffee Cake </p>

<p>I have a recipe for that cake from my grandmother.</p>
<p>Cream 1/4 lb butter and 1 cup white sugar
add 2 eggs, 1 at a time
add 1 tsp baking soda to 1 cup sour cream. Add this to butter mixture.
Let stand for a few minutes
Sift 2 cups flour and 2 tsp baking powder and a pinch of salt.
Add to mixture. Add 1 tsp vanilla.</p>
<p>(in a separate bowl) chop 3/4 cup walnuts, add 1 tsp cinnamon and 1/2 brown sugar</p>
<p>Nanny always baked this in a spring release pan (you don’t want to have to turn it upside down to get it out of the pan).</p>
<p>Pour 2/3 of cake mixture into greased & floured pan. spread evenly.
sprinkle 1/2 of walnut mixture.
Spread rest of cake mixture on top. Top with rest of walnut mixture.</p>
<p>Bake in 350 oven for 45 minutes</p>

<p>thanks NEM…that might be it…My mom used to use a Bundt pan…don’t know how she released it w/o ruining the attractive top. (thanks to sueinphilly, too). I remember it did have the cinn sugar and walnuts. It had this distinct taste and moisture…I just LOVED it!!!</p>

<p>No apologies needed. My mom has had 3 severe strokes. The first one was the worst. It happened on the morning of my parents 50th wedding anniversary! That was almost 6 years ago. </p>
<p>She lost vision in her “right field of vision”…which means she can’t really see anything that is on her right side without turning her head. So, she lost her ability to drive (that was a BIGGIE!)</p>
<p>She also has some aphasia…she can’t think of some nouns…but she can “talk around it.” Such as…she can’t remember the word “purse,” so she’ll say “where I keep my money.” </p>
<p>She hasn’t been able to fly since her first stroke because there is a belief that the pressure change will bring on another stroke. Her first stroke happened about 6 hours after flying. </p>
<p>the weird thing was that after her first stroke (she was on vacation), the neurologist said that she would be a vegetable because of the extent of the brain damage. He was soooooo wrong. Mom can dress herself, shower, use the toilet, do her hair/make up and communicate pretty well. We don’t have her use the stove, but she uses the microwave and does light housekeeping and all of the laundry. </p>

<p>To ground chuck for hamburger patties, I add some Sweet Baby Ray’s BBQ sauce, some Tsardas Memories (a spice from Penzey’s) and bread crumbs. Even my D will eat them!</p>
