high-heat + pre-injected

<p>Has anyone tried the high-heat turkey method with a pre-injected (with broth) turkey?</p>

<p>I’ve done h-h with non-injected turkeys (and chickens), and I know how to make that successful, but never tried it with a pre-injected. It goes against what chef marc advises in the first place, but I dunno – never having done it.</p>

<p>PS: I intend to cook my turkey on convection mode. I have a bimodal oven and with this model I just find that using the conventional mode dries out meat. When I use the bake (roast) mode, the meat is done way ahead of predicted, and is dry. Convection appears to be its default preference.</p>
