I can’t remember the brand, but there are some cookies available at Walmart that I believe meet all your criteria. They have oatmeal raisin and chocolate chip. I’d check the ingredients for almonds though as sometimes almond flour is used. For some reason, I think these are nut-free as well. They are a perfect size cookie. Sorry I can’t remember the brand.
Carmelized pecans are delicious. Just sugar and butter—“I Can’t Believe It’s Not Butter” now makes a vegan butter you can use. Or a lot of margarines are vegan since they’re made using vegetable oils.
@mathmom, I was going to post the recipe then I saw that it had eggs. My point was that there were a lot of positive reviews that black bean brownies were tasty.
Beans in desert really aren’t that weird. Daifuku mochi is a Japanese dessert that has sweet rice flour molded around sweet red bean paste. It’s delicious, but a real pain to make. You can buy these at Asian bakeries or markets, and there are recipes online.
Pinto bean pie is a Texas treat, but I think it has eggs in it and you’d have to find a gluten free pie crust recipe.
Sweet bean soup was a common end of the meal in Hong Kong. But I have to admit I did not like it! I’ve never been a big fan of the bean paste desserts either!
@deb922 I could never be a vegan, because I love eggs and really don’t feel guilty about eating them. I also generally just don’t like vegan baked goods much.
I’m currently eating mostly vegetarian during the week with omnivore weekends.
Didn’t know whether others have suggested similar ideas, our go to gf-cf desert is sliced ripe plantain baked in coconut oil, you can add honey/nuts/coconut flakes/pineapple slices if you want. So easy and so tasty.
@mathmom While I adore sweet red bean paste, I completely agree with you on vegan baked goods. Every time I try one, I think, well, this is okay but it would be a thousand times better if it had eggs and butter!
