Kohlrabi recipes

Anyone have any recipes for kohlrabi? We have three…and have never had this before. I might make a slaw out of one…with carrots. DH might roast some.

Any ideas would be welcome!

Quartered and roasted with some garlic, olive oil, with some grated Parmesan cheese on top. Yummy.

My Czech grandma grew kohlrabi and made regular cole slaw out of it. My dad always said that’s where “Kohl” slaw got its name. :woman_shrugging:

I grew up on Kohlrabi slaw.

Fun fact: kohlrabi, as well as cabbage, broccoli, kale, Brussel sprouts, and collard greens are all cultivars of Brassica oleracea (wild cabbage) which is native to southwest Europe.

I wonder what other recipes there are where you could substitute kohlrabi for one of its cousins.

I do the same as @skieurope . You can mix in other veggies too. Or you can slice it and braise it. I would do it with garlic.

We first encountered kohlrabi in a farm share, and it’s become a favorite.

Well…if kohlrabi is like brussel sprouts, I wonder if I could do the honey roast brussel sprout recipe and substitute cubed kohlrabi?

I would think it would be great! The main think is to get them soft.

Back when we were doing a CSA we mostly just threw them into stir fries or into mixes of oven roasted vegetables. There’s a recipe for fritters here: Category: Vegetables - ■■■ CSA

Another idea is soup. So like a chicken or vegetable based broth with other vegetables and use the kohlrabi like you would cabbage in the soup. Add chicken if you like.

On another note, Trader Joe’s has carried this, but I can’t find anymore. BUT! Picky, not really a veggie lover H really liked this and we used in place of Pasta. Microwave for 3 minutes–easy peasy.retina_Trader-Joe_s-Kohlrabi-Vegetable-Pasta-20220519-1829-4916-2584

I just made a slaw with some of my kohlrabi, apple, and carrots. It’s fabulous. Never going back to cabbage!

@skieurope how long do you roast the kohlrabi and at what temp? I still have two left and I’m going to do that too!

450 for 30-35 minutes, stirring every five minutes after 20 minutes

Kohlrabi slaw with carrots and apple. Used Marie’s Slaw dressing. It was delicious!! I like it much better than cabbage slaw.

When my kids were little and we lived in Germany, I used to make a pureed Kohlrabi soup that they loved. Saute an onion in butter or oil and add some curry powder when it’s just about soft. Take equal parts potatoes and kohlrabi and add them to your pot. Cover with veggie broth and simmer until soft. Puree with an immersion blender, adding more broth/water if it’s too thick. Garnish individual bowls with sour cream, chopped green onions, and roasted sunflower seeds.

We also really liked to just peel the Kohlrabi and eat it raw.

@Papermom Yes, I actually eat them raw and love it. I can’t find it in the store very often.

to OP … anything a turnip can do, Kohrabi can do better so look at turnip recipies.

This thread is making me smile! Growing up my dad grew kohlrabi in the garden every year- tons of it! And I don’t think I EVER saw him or my mom do anything with it besides eat it raw…… peeled, sliced, and sprinkled with salt.
