Latin is a class, while Model UN is an extra-curricular. Why would you have only one?
Most highly selective schools want to see 4 years of a language, but they also want to see ECs. So the answer depends on what else is on your college resume
I am also taking Mandarin (this is my second year). For some reason, the scheduling for Latin means that half of the Latin classes interfere with all of the MUN electives.
With this clarification, which would be better for admission?
Generally, I would suggest that you take the course above the elective extracurricular, unless you have a significant leadership position in the Model UN club. Of course, much would depend on which schools you are applying to, your intended major, etc.
