My son visited LMU and rated it a 10. But he is concerned that they barely mentioned engineering and thinks perhaps he should chose a more “serious” engineering school. He has a number of more technical schools on his list (RPI, RIT, Rose Holman) as well as Case Western and Northeastern. Any experience from current student or alums on LMU for engineering? Thanks in advance!

That’s not the only thing that might matter, but I think it is a good start on confirming it is a “serious” engineering program.
Next up you can check the NCES College Navigator to see what people are actually majoring in by the time they graduate:

In this cohort, 77 total primary majors in engineering (so roughly four times that for the whole school at any one time), most in one of those three, plus 5 in Engineering Physics. Not huge but not tiny either.
Others may be more informed, but this is just some basic data.
As mentioned LMU has an ABET accredited program for Civil, Mechanical and Electrical engineering. That’s probably the most important fact. It means your son will get the same curriculum from competent faculty as at other universities.

Their engineering program appears to have a pretty decent employment rate and graduate school admissions. Average early salary looks pretty comparable to the other schools you mentioned, but I only did a cursory look.
Fit is really important for student success. It’s better to be an accredited lesser well know school and excel than at a “top” program and miserable.
oh, and not that it matters, but LMU’s engineering program is ranked in the top 25 of undergraduate programs by US News and World Report. I don’t think those rankings are too useful, but I think that should ease concerns that it isn’t a legitimate program.
My son is a sophomore in Mechanical Engineering at LMU and very happy. He came from a top two public high school in California and had high stats and great ECs. He also has a twin brother majoring in ME at UCSB. Both programs are very similar due to the ABET accreditation. Although UCSB is a much larger school, the engineering program is small as is LMU. The major benefits are the relationships you can develop early on with professors, research and internship opportunities, small class sizes, hands on classes, and an absolutely beautiful campus.
He’s involved with ASME and the REACT Lab in addition to being a TA in the math department. His advisors have been very helpful and available in addition to his professors. Last, he did receive significant merit and grants which made the cost less than a UC. I am very happy with the school, the academics, the overall vibe and the community as a whole.
