Make-ahead grab and go breakfast/brunch foods

Ds and two friends (20-something’s) coming in next weekend. They are going to be busy with lots of activities (driving to a theme park, attending an 11:00 a.m. college football game, etc), so I don’t want to force a, “everyone must be ready to sit down and eat,” kind of breakfast. I can do cereal, fruit, yogurt, muffins, but I’m looking for some other thoughts. Definitely want some substantial offerings.

Specifically, does anyone have a tried-and-true recipe for those individual quiches in muffin tins? That could be just zapped in the microwave? I’ve seen a bunch of different recipes, but I’ve never tried any myself, so I’d appreciate one that has been vetted. Or something similar? I’d like to do homemade, not pre-prepared/frozen. But if you know of something yummy at Sam’s Club (no Costco here), I’m open.

Very important - one of the friends has an EXTREME tree nut allergy. So no suggestions of ANYTHING that contain nuts.

My daughter likes these - mini omelet cups - you can make with any kind of omelet fillings you like

This is the base recipe we use because my kiddo loved Starbucks egg bites. We switch up the flavors but stick with this base. Freezer friendly and easy for kids to pop in the microwave for a quick meal.

Personally, I’m not a fan of quiche. Maybe it’s the crust. Maybe it’s because I’m a child of the 70’s and I overate of quiche in my youth. But in any case, I don’t make quiche. However I do make cook-ahead scrambled eggs muffin cups. I crack some eggs into a bowl and mix it up. To these raw eggs I then add some pre-sauted mushrooms, some precooked wild rice, some fresh or dried mixed herbs (parsley, sage, rosemary, thyme, chives, really whatever you have), some chopped raw asparagus if I have it, salt, pepper. Then I pour this mixture into greased muffin tins and add a couple of blobs of soft goat cheese. Then bake at 350 for maybe 20 min until toothpick comes out clean. They can even be frozen and reheated.

For something a bit heartier with a hash brown base, we do this occasionally. I used to do it a lot more, but now we are low-carb ish. It’s what we did when kiddo was younger for an Easter bird nest rosti.

How about make ahead some breakfast burritos? You can freeze them and they can just take one out and microwave.
Flour tortillas
Scrambled Eggs
Shredded cheese
Sauteed veggies if you want
Sausage or bacon crumbles

Make an assembly line - choose maybe two varieties (egg/cheese and “everything”) and then wrap in parchment and plop in a ziplock bag or big container. They can pull one out and have ready by the time they pour their coffee.

Oh, and have some hot sauce on the table. :slight_smile:

I make a lot of recipes from Skinnytaste. This is a new high protein recipe that I haven’t tried yet.

I’m with you about not enjoying the crust. I make most pies now with no crust, if we’re just eating at home.

(If I’m taking somewhere, I do enjoy getting a bit creative with the pie crust. :slightly_smiling_face:)

I forgot, they are in the refrigerated section near the cheese and meat.

I freeze them and cook in the air fryer.

My D likes the egg bites and I’ve used that Starbucks copy cat recipe already posted with good results. But, I prefer to make an egg casserole. This is my go to recipe: Easy Breakfast Casserole Recipe - Sally's Baking Addiction

If a grab-and-go, individual serving isn’t needed, I agree. We love breakfast casseroles. That’s my go-to for Christmas morning or whenever we have guests, since it can be prepared in advance and just popped in the oven.

I haven’t seen this exact recipe but it’s very similar to mine (minus mustard seasoning). I particularly like all the tips for incorporating optional ingredients since I almost always “doctor up” recipes. :grinning: Thanks!

ETA: you could probably cook the breakfast casserole, cool, then freeze in individual servings? Maybe that’s what you were suggesting and I misread that. I do that with some casseroles so we have easy pre-cooked meals that I can prepare in bulk.

What about a breakfast strata made in individual ramekins , baked and then refrigerated so they can be reheated in a microwave?

I usually make 2 different sets of fillings: one with gruyere, thyme and fresh spinach; the other with green chile, sausage or bacon and cheddar.

(You do need to precook the sausage or bacon before adding it to the bread cubes and raw egg mixture.)

Active 20 something year olds who have lots of activities may not even pause at the table to have breakfast. I would try to have some grab and go items - you know, someone slept late, the car is leaving NOW, they were the last to get a shower… all those things!

That’s why I mentioned breakfast burritos (hand held breakfast) and maybe have some protein bars or Chomp sticks for grabbing.

My young adults are not so much into eggs (too heavy, too much fat) and are more into overnight oats and chia pudding in disposable cups for a grab and go breakfast.

I used to make myself a grab and go breakfast burrito to take to work in the morning. After flling, I’d roll the burrito, wrap it in wax paper then wrap it again in foil. The foil keeps any leaks inside the wrapper, then I coul peel off the foil and warm it up in a microwave at work, using the wax paper to hold it together and keep my hands clean while I ate it.

Another grab and go–oatmeal muffins with raisin/dates/dried apples/nuts.

We sub in whole wheat flour for up to a third of the white flour to increase the whole grain content

Or what about something like cinnamon roll Monkey Bread, made the night before, glazed , then left on the table for folks to tear apart whenever they get up.

We also make homemade [vegan] buckwheat waffles that can be made ahead of time and just re-warmed in a toaster.

We also do a lot of breakfast burritos here. Overnight oats is a great option for the heathy folks.

As for breakfast casseroles, an overnight crockpot version would stay warm

or a crockpot french toast if you are already making egg bites.

I’ve tried the 4ish-inch pan Trader Joe’s quiches (especially love the one with mushrooms and I think broccoli), and I think they have trays with smaller quiches. The 4" ones go in the microwave.

Also the small Banquet pot pies are pretty good; also microwavable–they come in paper trays.
