<p>I volunteered to make breakfast casseroles for an overnight event DS2 is attending. I found a delicious sounding french toast casserole, but I’d like to have another one that is eggs/sausage (or bacon) based.</p>
<p>I do NOT want to spend the night, so I need to be able to drop them off the night before with my crazy friend who is hosting :-). </p>
<p>This is highly rated and isn’t made with bread, which will differentiate it from your other dish (I think I’d use a sharp cheddar, though, to give it some oomph):</p>
<p>If it was me, I’d make a variety of quiches. They are really easy to reheat in the morning and you can accommodate meat eaters/vegetarians easily. Personally, I am not a fan of stratas as I have an aversion to soggy bread things. :)</p>
<p>I have three really big ‘boys’ now grown or almost grown who all eat quiche…even with broccoli! :eek: You’d be surprised. I’m sure anything you make will be greatly appreciated.</p>
<p>Haha…well, thankfully recent generations of men and young men are more enlightened in their eating and are beyond the “real men don’t eat quiche” thing. After all, its just eggs and crust and whatever you choose to add. Bacon is always a big hit with teens. It’s a breakfast favorite for my son and he and several of his friends polished off 3 this past weekend including the spinach and feta one. </p>
<p>I agree with blueiguana. Anything you make will be appreciated. Most teen boys I know are hearty and adventurous eaters. </p>
<p>Now, if you really want to earn Super Mom status among your son’s friends, here’s the recipe that will do it. When I make this, my kids’ friends think I am a culinary goddess. :)</p>
<p>Quiche without crust = frittata or Spanish tortilla. They reheat even better than quiche. They are wonderful with cheese, potatoes, onions, etc.</p>
