We had one of these last night with salmon and asparagus with a lemon garlic sauce poured over. Added a salad to round out our meal. Quite tasty and quick clean-up since I lined the cookie sheet with foil. This type of cooking seems like a good option for us empty nesters. It made four servings, so we will have leftovers tonight. I cook often in our Instant Pot, but those recipes sometimes yield more than we want/need. I’ve been looking around for other sheet pan recipes, but would love to have some that are tried and true that others have vetted. I’m not a winging it kind of cook, so please don’t tell me to just put veggies and meat on a cookie sheet - lol. Also, not a Pinterest user, so direct links preferred! TIA!
I make this a few times a year. I add extra orange including the juice. You could easily downsize it or just have leftovers.

Doschicos that is one of my very favorite go to dishes! I’ll use Polish sausage or any other sausage, sometimes throw on some diced bacon, use sweet potatoes, etc. A great recipe that is the base for many variations.
I make sheet pans dinner frequently! I think it’s perfect for everyone - empty nesters, busy couples, busy families! Even my single college student makes them just on a smaller scale and then has a couple of meals!

Basically though, I’ll just take a meat -often chicken, any veggies good roasted, herbs, good olive oil and other seasonings and throw it in the oven!
One can wing it but I do think it is important to think about items that require the same cooking time. Seafood and some veggies, for example, aren’t going to work because the seafood will cook much more quickly and dry out.
We make a one pan dinner of potatoes, sausage, and bell peppers.
I use yukon gold potatoes and cut them into little cubes. Season with olive oil, salt, pepper, and fresh rosemary. I also add 1/2 a chopped onion.
Cook just the potatoes and onion in a 375 degree oven for 20-30 minutes, until soft but not browned. Add the sausage and chopped bell peppers and cook an additional 30 minutes until the sausage is cooked through.

Mine’s not from a recipe and I keep the sausage whole…and uncooked pork sausage. A precooked chicken sausage would dry out way too much in the oven.

If you’re searching online for recipes to try, look for “tray bakes” as that is what they are called in the UK, where I first noticed popularity for the concept due to chefs like Nigella Lawson and Jamie Oliver.
The one behind the paywall (posted by abasket) is exactly the same as the harissa chicken recipe posted by whidbeyite2002. (I have a subscription to NY Times Cooking.)
Speaks well to the deliciousness of this recipe that it has already been referenced twice!
@doschicos - hmmm, that is yielding me bar recipes like brownies. Any ideas on how to refine those searches? Maybe I’ll try inserting “savory” before “tray bakes.”
Edit: Okay, I get good results with “tray bake meals,” or with an ingredient, e.g. “chicken tray bakes.”
Try adding the word supper or dinner in the search. That will fix the problem.

@HImom I downsize the sheet pan recipes to 2 servings and cook them in a countertop over. Works great.
