Woke up and cooked three eggs, with two pieces of toast on the side and a half bowl of strawberries my son was supposed to eat but he left in the fridge therefore it is my job to eat it before it spoils. I felt bloated afterwards. It was too much food. I should’ve had two eggs and no toast. Toast/bread and I do not get along.
Went out and exercised. It is perfect here today. Chamber of commerce type perfect 75 degrees, warm, sunny, not blazing hot, just impossible to be inside. So, I get home and decide to make a salad inspired by a restaurant meal I had a week or two ago. I had already BBQ’d a bunch of chicken thighs and had that in the fridge. I BBQ’d the chicken in a honey mustard sauce I made myself based on what I saw a chef doing on one of those food TV shows and it it came out really good.
So, I put some romaine and baby spinach in a bowl, warm the chicken chunks, thigh meat is a darker and more flavorful part of the chicken, and mix in a bunch of other stuff. This is where the artistry comes in. I add in some onions, parts of a green pepper, also BBQ’d the other day, some goat cheese and some other cheese that was in powder form and was in the fridge and is either cheese of cocaine not sure. I should’ve added black olives but I was hungry and ate my masterpiece before I could add more ingredients.
For dinner I will probably have some kind of grain cereal with pecans in it. Honey nut and grain or something or another. Honey oat and tree bark. I can’t remember right now.
Sundays are bagel days. I had a sesame seed bagel, toasted, with peanut butter, a glass of fresh squeezed OJ, and a hard-boiled egg. We don’t eat lunch on Sundays as breakfast is more filling than usual and we usually have an early family dinner with two or three Ds and significant others, and grandchildren. I just had a delicious clementine to tide me over til then! My Ds are all bringing dinner tonight so I have no idea what will arrive here at 4:00.
Sunday is poached egg day. One on half an English muffin. Honey on the other half of the English muffin. Coffee. Lunch was poke (sushi salad basically) and regular sushi. Dinner will be steak, salad and asparagus. Red wine.
I’m buying stock in a bagel company as soon as the markets open tomorrow. You people eat like birds. I need to stop stuffing my face. Oh well, it doesn’t matter, I’m married anyway.
Always treat myself to a bagel on Sunday mornings – but I slice it in half and scoop out most of the dough to avoid the heavy carb load. I top with chive flavored cream cheese, a slice of tomato and red onion. This will keep me until dinner which tonight might be take-out as the Oscars will air at 6:30 mountain time.
Weekends are for big breakfasts at my house - it’s one of my favorite things to do/cook.
Breakfast was 1/2 waffle with pecans and pure maple syrup, one slice of peppered bacon and some strawberries with a dollop of my homemade whole milk yogurt.
Don’t usually eat lunch on Sunday, but was at my mom’s and you DON"T not eat at my moms! A small piece of chicken breast with a little rice and some roasted peppers.
“Dinner” will be a little Mexican while watching the Oscar Red Carpet - refried beans with some diced onion, jalapeno, queso fresco and hot sauce. A few tortilla chips for dipping. And don’t forget a little sour cream (or more yogurt!)
Breakfast: Egg on a slice of toast + 2 Girl Scout Cookies
Lunch: Kind bar and banana + 3(?) Girl Scout cookies
Dinner: Vegan frozen meal with tofu, chickpeas, sweet potato, Moroccan spices (husband and son eating leg of lamb - gross) + undetermined number of Girl Scout cookies
Breakfast was full-fat Greek yogurt with Kirkland Triple Berry Blend and ground flax.
So good I had a second bowl for lunch.
Dinner so far has been hard-boiled eggs and Kirkland Normandy Vegetables (broccoli, cauliflower, two types of carrot) with cheese / onion powder / Penzey’s roasted garlic. I need to go see what else is in the fridge; tonight is eat the leftovers night. Probably a pork chop with barbecue sauce and an inordinate quantity of blueberries.
