I need a good recipe for spaghetti squash. I have made it twice now and I thought it was great but DH and DD were less than thrilled. I seasoned the squash with salt and pepper, drizzled with olive oil and roasted for an hour. I served it with a chunky marinara and parmesan cheese. I thought it was excellent, even had leftovers for lunch the next day, but apparently I am the only one, lol! I want to try again and I have found some really great recipes here, so I thought it was worth a shot asking.

Why waste it on them? Keep preparing it just the way you are . . . and enjoy the leftovers!

I made this at Thanksgiving as a side dish. Spaghetti squash with jalapeno cream sauce. It was quite different but in a good way. If I was making it again I would use less of the cream sauce (it was a little too liquidy) and leave some of the seeds in the jalapenos for a little more kick. But I like things spicy. :)

I feel like spaghetti squash is a love it or hate it food.

My daughter loves this site and I’ve really liked everything she’s made using one of the recipes.

I’ve now cooked it once. I used the method of pricking it then roasting it whole, cutting it in half and removing the strands by shredding it with a fork. Someone told me to cut it across rather than lengthwise to get longer strands, so that’s what I did.

I haven’t done anything particularly adventurous with it: spaghetti sauce made with ground turkey, and a little impromptu alfredo-like thing by microwaving some in a bowl with cream, then stirring in grated romano and black pepper.

Next I think I may try something Asian with it, like a sesame/peanut sauce.

Abasket- I just made that recipe on Monday! After reading the reviews I knew I wanted to have more kick, so I did not seed my peppers and I left them in instead of straining them out. My husband loved it! I also seasoned the squash before mixing as the squash itself doesn’t have much flavor. The recipe makes a ton; way too much for two of us.

Good idea Snowball, adding the seasoning!

Thanks for al the great ideas! I would keep it all for myself but working towards a paleo diet for my DH. Ignatius, that Cheesy Baked Spaghetti Squash Boats with Grilled Chicken sounds delicious. I think with enough cheese, even my picky eaters will like it! I think I will try that one and then a few others, one will have to be a hit, eventually, lol.

I saved that “boats with grilled chicken” to my Pinterest “Recipes To Try” board! Looks really good!

^^^ fishymom and abasket: I hope the Cheesy Baked Spaghetti Squash Boats with Grilled Chicken are as good as the other dishes my daughter has made using skinnytaste recipes.

She makes the following one and it tastes really good and is quite filling.

Not spaghetti squash, I know, but I couldn’t help myself.

I make spaghetti squash fritters–no exact recipe, but basically mix the prepared strands with minced onion, a couple eggs, a little flour, and soy sauce, then form small patties and fry them in about a quarter inch of oil. You could probably leave out the flour and then it would be paleo (I think). just might have a little less body to them.

Garland, so glad I was having late lunch today, I made the fritters and the are delicious! I added a little garlic in the mix instead of soy sauce and marinara sauce on top, yum, my DH will love this parmigiana style! Thank you!

Cool–glad to be of service! And your version sounds yummy; I will try that next time.

abasket- I just reread your original post that your dish was too watery; try mixing most of the cheese in with the squash and only put some on top. I found that help a lot. Also, did you use a towel to squeeze the water from the squash? You will not believe how much water is in there, and a clean towel will help release the water that makes the dish soupy! I have a couple of spinach dishes that I have to squeeze the water from otherwise I have a wet dish!

I have used the towel method for spinach but never gave it a thought for the spaghetti squash - I will try that!

I have also made the recipe suggested by NorthMinnesota, but I prepared the squash by roasting in the over first, rather than microwaving. Just cut it in half, clean out the seeds, sprinkle with a little salt and pepper and drizzle with a small amount of olive oil and bake for about 45 mint at 400.

If we have leftovers, I mix in a little egg and make pancakes out of it and serve like potato pancakes, with a little sour cream or apple sauce.

fishymom – sounds good to me – I think I’ll give your recipe a try!
