<p>Middle Eastern food is very refreshing in the heat (makes sense, considering the climate there!)- Dh and I went to an art fair Memorial Day weekend, and were soooo hot. We went to a Moroccan restaurant afterward and it was just the ticket! Had the iced Moroccan mint tea rather than the hot - both are so delicious!</p>
<p>Anyway - this may not work for your picky eaters, depending on how picky they are - many times in the past we’ve made a dinner out of baba ganoush or hummus (homemade or store bought - neither is that hard to make) with pita bread and lots of veggies to dip in it, sometimes also with feta cheese and kalamata olives from the middle eastern deli and cheese shop - also sometimes tzatziki- YUM!. Delicious, nutritious and cooling. Lemonade, iced tea or beer to drink. We love having this as a summer meal (or anytime) and don’t feel at all deprived.</p>
<p>Or how about a baguette or other good bread, cheeses, fruit or a big fruit salad, plain yogurt with fresh fruit mixed in? Could supplement or substitute with various dips or spreads and veggies. Some salsas or chutneys are great over cream cheese, then spread on crackers or baguette slices. Or a plate of fruit with a fruit dip. Could also add some good hard salami (or even deli ham).</p>

<p>collegeshopping, I had to come back to report that I made this salad tonight for dinner and it was fabulous! My husband said it was the best salad he has ever had, and coming from him, that was quite a compliment.</p>
<p>I didn’t have any glazed walnuts so I just used regular pecan halves and it was still delicious. Thanks for the great recipe!</p>
<p>^ I glaze walnuts quickly by sauteing them in a little butter and then adding maple syrup.</p>
<p>Stirfry would be quick and won’t make the kitchen very hot. Add pineapple and cucumber sliced very thin with some cilantro over your stirfry to give it a light summery taste.</p>
<p>Our guys are fairly picky but we all love fish tacos in the summer (or anytime).</p>
<p>Use any firm white fish, cut into 2 inch chunks, dredged in egg and panko, plain or Italian style breadcrumbs then fried quickly in hot oil til golden brown. Drain well then squeeze fresh lime over top.
Prepare small flour tortillas with some shredded cheddar in center and melt in oven.
Remove tortillas from oven, then place a few chunks of fish in each. Top with any of the following depending on level of pickiness ;)</p>

avacado chunks
sour cream
fresh salsa or pico de gallo</p>
