Hi I am currently a high school junior studying abroad in America.
I’m originally from South Korea, but I’ve been studying in the US for a while. I read on University of Edinburgh’s website that a possible combination would be to have 600+ on all three parts of the the SAT and 700+ on two SAT II subject tests. I was planning on taking Literature and Biology as my two subjects, but I heard that literature would not count because that would mean I technically took two English/Literature tests(SAT and SAT II). Should I choose another subject test or just continue with my plan?
Thank you!

What subject are you applying to study? most of the time they want relevant or similar subjects, and I can’t think what course bio + lit would work for. Have you read this page (including the bit at the bottom):

Edinburgh loves the fees that international students pay, but if you are applying to a competitive course doing the minimum probably won’t be sufficient.
