I am not the one starved by lunch. I think that was mom60. Our avatars look alike!. I usually eat 2.
When I “dieted” I was always hungry, but I was eating things like light cheese, Lean Cuisine, Slimfast…you get the idea. I was eating foods that were labeled low calorie but weren’t very nutrient dense or filling. I now realize I can eat more whole, natural foods (and maybe even a few more calories) but still lose weight.
I went for a heart health eval and one of the things they did was examine my diet over a period of two weeks. One of the things I wasn’t doing was eating a healthy combination of protein, carbohydrate and fat at breakfast - I was eating too much carb and it burned off very quickly, causing my blood sugar to drop. There wasn’t enough slower burning protein or fat in what I was eating. The result - I was shaky and starving. So, a good breakfast is a good idea!

Update. Made the hi-pro pancakes for breakfast today. I used milk instead of water (the box directions said it was ok if more protein was desirable). 2 4-inch pancakes, half a cup of yogurt, and a cup of strawberries are still keeping me full. The pancakes were not as fluffy and airy as some hi-carb versions, but still had volume and tasted like pancakes. I think this mix is a winner!

I feel like I weathered the Passover/Easter celebrations with restraint.
The pancakes sound interesting. I’m not a huge fan of pancakes but I do like Pamela’s brand of gluten free pancakes. I like cooking pancakes in coconut oil and find that I don’t need syrup on them since the coconut oil gives the pancakes a bit of sweetness.
Looking for a decent recipe for a make ahead egg dish for quick breakfast. I like the idea of crust less quiche but my D who is living with us doesn’t eat dairy. I’m thinking frittata made in muffin tins but milk and cheese less.
Matzo And butter are not my friend

I have lost more than 11% since the first week of Jan.
Seriously thinking about experimenting with Atkins diet. One colleague lost over 15% already on Atkins. Seems easy - eat all you want just no carbs.
I’m not opening the matzah box. Butter and matzah is addictive.
I did some googling and improvised my egg cups. For 12 muffins I used 8 eggs and 3 egg whites. Sautéed an onion till it was almost carmelized. 1/2 red pepper chopped super small, almost a box of baby kale,chard spinach mix wilted. I also had 2 sausage links from whole Foods that I took out of the casings. Sprayed non stick coating on tins. Heat oven 350. Layered with vegetables on bottom and then added eggs. For 1/2 of them I added a small amount of goat cheese. They were done in about 20 minutes in a convection oven. They were a bit difficult to remove from pan.Cooled them and wrapped each individually in plastic wrap and put all of them in a big ziplock. They can now be grabbed for a quick go.
Taste- I microwaved 2 this morning for 30 seconds. I had one with cheese, 1 without. I think the goat cheese made for a tastier egg cup. The carmelized onions gave great flavor. I could have used more greens. I like that the kale and chard don’t get as mushy as spinach alone. My picky D liked them. All in all I think a great way of getting more greens into your diet. By making ahead you don’t have any dishes in the morning if your rushing to work.
Has anyone used the silicone cupcake pans? I think that would make removing the egg cups easier.
Those sound delicious!! ^^^ Good job being inventive - I just read something - cooking is only as good as being desirable to eat! In other words, you can cook a healthy meal, but if you don’t have the desire to eat it, it won’t likely be repeated again!
I have silicone mini bread loaf pan and a scone pan - everything pops out very easily. I’ll bet a muffin one would work well.
Well, proven again the reducing intake is the most critical factor for weight loss. One’s body gets use to same exercise after a while. I did a 21 miles training run the other day and only lost 3 lbs. A couple drinks of water and a lunch later, it got all even up.
However, just some mild over eating during those weeks around Chinese new year gained me over 10 lbs.
Hi Dad II … In this thread we are happy to do a 5K! Don’t overdue it with 21 miles … If you are gaining weight with that kind of regular exercise I don’t know what can help!

Going to make the egg “muffins” tonight - we finally have our ovens in, and I’m loving the steam function! I can cook dumplings and ravioli quickly. Steamed veggies are a 5 min deal.
It’s great you got your oven back. I made egg muffins again this week. This week I used a lot of Pam since I haven’t had time to search for a silicone muffin pan. I used a small amount of bacon this time. I think they could be tastier with more cheese and a bit of cream or milk. I am still experimenting and I think for the purpose they are a great breakfast item to have around.
I am feeling pretty good. Down about 5 lbs since I restarted my efforts. Key for me is limiting my starch consumption to just a couple of meals a week. Also it helps me to not dine out.

Great job mom60! Some fresh herbs or veggies can be good in the egg muffins too - chives or parsley for example. Or finely diced onion, red/green pepper, jalapeno, etc. - those things help to give flavor without added calories! Even bacon, ham or sausage crumbles (cooked first and drained/wiped of grease) in moderation could be ok.
I lost 10 lbs after 3-4 weeks of being sick. I lost my appetite. Good thing I have not gained my old weight back after loosing it for a month. Not something I recommend to lose weight.

The 5 Foods I Like to Prep Every Sunday
Melon - I have a sweet tooth, but I find that watermelon this time of year satisfies it completely. I cut up entire watermelons and stash juicy cubes in the fridge for eating before the gym or after dinner. The same goes for cantaloupe and honeydew melons; they’re a summer treat whether you eat them like this or like this.
Celery Sticks - My essential snacking standby. I know not everyone loves celery, but I find its crunch super refreshing, and it’s a good foil for protein-rich dips. I cut up a whole head of celery at once and store the sticks in a bowl of water to keep them crisp.
Hummus or Light Yogurt Dip - When I have extra time I make a big batch of hummus or baba ghanoush. When the week is busy I pick up a container of yogurt dip at the store. This plus celery sticks totally handles my snack needs during the workday.
Boiled Eggs - OK, but what about breakfast? I have a newly discovered love of boiled eggs, thanks to our recent tutorial on cooking them to any level of doneness. I like mine gooey and soft-boiled, so I cook half a dozen at the beginning of the week and eat them with truffle salt for breakfast. So satisfying.
Lentil or Bean Salad - As far as lunch goes, lentil salads have been my fix lately. Beans and other legumes have decent protein and fiber, which fills you up and keeps you satisfied. A bowl of hearty lentil salad keeps me going all afternoon.
So, what do you think? Are some of these 5 in your wheelhouse? What would you take out or substitute for a top 5 “prepped and ready to go” foods to encourage healthy eating? Notice this is a blend of fruit, veggies, protein, whole grain, etc. - so prepping 5 fruits alone isn’t going to be the key to success (and appetite satisfaction!).
For me, the melon is a winner. I’d add some more veggies to the celery - red pepper, cucumbers, onions (love onions dipped in hummus!). Keep the hummus. Also have my favorite whole milk plain yogurt and homemade granola at the ready. I’d sub some cheese for the boiled eggs (I already eat a soft boiled egg several mornings a week). The lentil or bean salad would be a winner for me!

It is easy to reach for something “quick” when you don’t have the energy to do a bit of prepping. Quite often, this “quick” stuff happens to be snacks full of empty carbs, because healthy and fresh needs some work, so it make sense to do the prep when one is not tired and hungry.
