<p>I need some help. I’ve been sick over the Christmas Holiday (that horrible coughing hacking lung stuff) and in my desperation cooked a large ham so my boys could make ham sandwiches. Well, the bloom is off that flower! So much ham and so little I can think to do with it. On a good day, I can do this but I’m so down with this flu stuff, I really need the help. Any ideas? PS I’ve done the ham salad thing.</p>

<p>scalloped potatoes with ham, split pea soup with ham, eggs and fried ham, asparagus and ham in crepes ( I think I got the recipe from allrecipes dot com. There is so much you can use ham for. I would definitely freeze it if you can’t use it now.</p>

<p>If I end up with a large amount of leftover ham, I chop it into small cubes and freeze in several plastic baggies. Then I use the chopped ham in my split pea and minestrone soups.</p>

<p>here’s what I did – it was good!</p>
<p>Ham Tetrazzini</p>
<p>SERVES 6 -8
Ingredients
5 tablespoons butter
1/2 lb sliced fresh mushrooms
1/2 cup chopped onion
1/4 cup flour
2 cups chicken broth
1 1/4 cups milk or cream
1 cup shredded monterey jack and cheddar cheese blend
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon lemon juice
8 ounces spaghetti noodles, broken into thirds
3 cups cooked ham, cubed
4 ounces chopped pimiento, drained
1/4 cup parmesan cheese
1/4 cup toasted breadcrumb
Directions
1Melt butter in a skillet. Saute mushrooms and onions, until most of mushroom liquid has evaporated.
2Blend in flour until smooth.
3Add broth, and milk or cream, stirring until smooth and thickened.
4Add cheese, salt, pepper and lemon juice. Stir until cheese melts. Lower heat and simmer uncovered 10-15 minutes.
5While sauce is simmering, cook spaghetti noodles. Drain noodles and add sauce along with ham and pimentos.
6Spoon into greased 2 quart casserole and sprinkle with parmesan and bread crumbs. This freezes well.
7Bake at 400 for 20-30 minutes.</p>
<p>Cube and cook with potatoes to make a hash. Use already cooked potatoes. </p>
<p>Put on a pizza. I’d leave off the pineapple but to each his or her own.</p>
<p>Buy wonton or gyoza wrappers and make dumplings or get rice wrappers - they come in stacks and you pour water over them - and make cold Vietnamese rolls.</p>
<p>Black beans (heat canned lack beans with some salsa or sun dried tomato pesto- my preference) and brown rice with ham cubes (I’d saute these with something to give them a spicy glaze - like jalepeno jelly). This works well if you have people who don’t want the ham as you can serve it on the side. You could add shredded cheese if you are into that too.</p>

<p>There are lots of recipes for red rice and beans that call for diced ham as an ingredient . . . and a steaming plate of red rice and beans is pure comfort food on a cold winter’s night.</p>

<p>I do as some of the other posters have suggested and freeze leftover ham. It is wonderful to pull it out later and use it in omelettes or quiche. My mother always makes a great soup out of the ham bone.</p>

<p>When I have a lot of ham, I make jambalaya. I am sure there are several other versions of this, but this works.</p>
<p>few tablespoons of oil
1 or 2 cloves garlic, minced
1 onion, chopped coarsely
1 or 2 green or red peppers, chopped
salt and pepper
1 or 2 tsp dried thyme
1/2 to 1 cup chicken broth
1 to 1 1/2 cup long grain rice
2 to 3 cups diced ham
16 ounces of canned tomatoes, undrained (whole or diced, whatever you have)
tabasco sauce
some times I add peeled raw or cooked shrimp at the end</p>
<p>Saute the garlic in oil until it sizzles, add a little more oil, add the peppers and onions, cook until a but soft. Throw in some salt and pepper. Add rice, stir until it’s coated with oil. Add 1 or 2 tsp thyme. Add ham, saute it a little. Add tomatoes and chicken broth. Break up the tomatoes if they are whole. Bring to a boil, then cover for around 20 minutes or so until the rice is cooked, stirring occasionally. Let the liquid cook down a bit. If you have shrimp, add them at the end. Throw in a little tabasco if you like, or let folks add it later to their serving.</p>
