Whatcha Cooking? - Comfort Food Edition

Tonight we’re having duck breasts with cherry chipotle sauce, roasted potatoes, and roasted carrots and shallots. Felt like something special and fall-ish. I think it’s my first time making duck breast. I typically make confit.

Making pumpkin bread with raisins (my son likes chocolate chips in it but I thought I’d try raisins) and zucchini bread with walnuts and banana bread just plain because it is sooooo good!

I’ll be making pear bread this week. I made it last year and it was really good! Taking it to an event next Sunday afternoon.

Does it taste like pears? I noticed some good ripe pears at the store the other day and almost bought for a dessert I ran across, but ended up not getting them.

Sticky guava ribs will be tonight’s dinner. I made the sauce and will pre-cook the ribs. They will get finished at my DD’s since I don’t have a grill.
Also started a turkey/bean chili for freezer portioning.

@BunsenBurner - I made the beef and mushroom stew last night and it was delicious. I served it over noodles with a green salad and some crusty french bread. Thank you for the recipe.

Gift link. Used several chicken thighs of indeterminate age individually wrapped in my freezer, plus cherry tomatoes of indeterminate age. Made rice in the cooker with a bunch of the same seasonings, chicken broth from Costco, and a small chopped onion. Came out yummy!

It has a pear flavor…sort of like apple bread has an apple flavor. It was really good!!

Ok, you all convinced me to pin that stew recipe and try it sometime!

Questions:
Did you use stew meat or another form of beef?
Did you add the optional heavy cream or no?

I thought about making this for my neighbor for her bday but she is gluten, dairy and mostly sugar free. I suppose I can sub out the butter in the recipe for something non-dairy…wondering if the cream really enhances it.

It is creamy enough without cream, so no cream. I used my favorite cut of meat from Costco, the American Wagyu stew meat. Despite the fancy name, it is relatively dirt cheap and always works well in kabobs or stews.

ETA: wonder if you can thicken it with potato starch instead of the flour/butter mix. Gluten and dairy-free is challenging.

ETA2: also, this recipe uses soy sauce. So if anyone is trying to avoid soy, it might not work.

I did use a bit of heavy cream in the sauce and the soy sauce and thought it was delicious. It reminds me of beef stroganoff, but much better. I used sirloin tips from Trader Joe’s and the meat was very tender.

I wish my husband would eat mushrooms.
Last night I went and saw the cookbook author Ottolengli. The tour is to promote his new cookbook Comfort. They sold out of the book but I’m looking forward to getting it and trying some new recipes.
My daughter gave me the new Rancho Gordo bean cookbook. Yesterday I made beans and topped them with caramelized leeks and parmesan cheese. Simple and comforting.

I made a crockpot recipe that called for thick boneless pork chops. Instead I sliced “chops” from a big boneless pork loin from Costco ($2.49/lb). It worked quite well. (In this case I started with only 5 hours to cook, so I pre-browned them and started on high first few hours. But I suspect it would have been fine cooking all day.)
