I know this is not a main dish, but we love the following rice dish:
Boil/simmer wild rice (we use Lundberg Wild Grain) using either water or the broth to match your main dish - around 45 minutes
Chop almond slices and cook in lightly oiled pan on medium heat until golden brown, and set aside
Chop dried cranberries (we use Craisens) and set aside
After rice is cooked, stir and set aside for a few minutes
Mix almonds and dried cranberries into rice
Serve hot, or save for later to serve cold
I’d top it with a poached egg and call it dinner! Sounds yummy.

Does anyone have experience making coconut whipped cream? I want to make a frosting for a 1 year old birthday cake and I want his cousin who is severely allergic to dairy to be able to have some.
I made a coconut 7 minute type frosting with egg whites and coconut and such in a similar situation. It was delicious - kind of like coconut marshmallow

You can also make it with aquafaba. I haven’t tried it but there are lots of recipes online. The recipe is vegan so no eggs.

It’s a stretch to call it “cake”. It’s made with banana, applesauce, pumpkin, coconut oil, vanilla and cinnamon. I’ve never actually tasted it. For another 1 yr old birthday I made extras as muffins and all the one years old loved them.
@ChoatieMom the cake is fresh. My daughter wanted a cake with no sugar added. I’ve made this cake three times before so other baby birthdays. We have real cookies and cupcakes for the other guests.
I somewhat recently learned about this use of aquafaba (on a cooking show) and have been meaning to try it just out of curiosity. It looked great and apparently tasted great too.
Sorry, I was being facetious as in “1 year old cake” = a cake that is a year old.
