Whatcha Cooking? - Comfort Food Edition

All of the cabbage recipes remind me of Sarma (stuffed cabbage rolls) from my childhood! Every Slavic grandmother has a recipe for Sarma and it can never be altered. Most of them are fairly similar; my family cooked a Croatian version, which uses fermented cabbage leaves. This recipe is quite similar to my mother’s. (Vegata is Croatian MSG-I generally don’t use it.)

In my family, this is called prolapse.. Yellow raisins, prunes, and sometimes apricots are added to the sweet and sour sauce. Grape jelly can be too. Nabisco spice cookies. The sour side includes lemon and sour salt.

This is not my recipe, but mine is packed up. Besides for boiling the cabbage to separate the leaves, one can freeze the cabbage which works well. We don’t use rice, and certainly don’t tie up the raisins.

This is similar to my grandfather’s version he used to make when I was a kid. Grandpa was our family chef.

New recipe tonight and def for the comfort food category: Chicken Shepherds Pie

I used some rotisserie chicken, left out the wine, used Bob Evans mashed potatoes a little thinned out and added some buttered panko on top. Veggies inside were onion, corn and some frozen corn and peas .

I knew it was right up H’s alley but surprisingly I enjoyed it too!

Had to get rid of a pound of hamburger that DH bought some time ago for a recipe he never made so decided to try @garland’s Egg Roll in a Bowl. DH liked it, but I’ll sub the meat for something else next time. It’s an easy, tasty weeknight meal, especially if you like salt.

I made this salmon bowl recipe tonight and it was Sooo easy and delicious! I used the premade Costco sticky rice that comes in microwaveable bowls. Added cucumber, avocado, green onion, chili crisp, firitake, sesame oil, soy sauce and used seaweed to spoon it on and roll up into bites.

Definitely a repeater (for me, H won’t eat…)

Not a meal, but I made Croissant Bread (from Sally’s Baking Addiction) in between shoveling snow and knitting yesterday. I messed up the last turn (it still tasted great) so I made another one today to try to perfect it. Much easier than making croissants, which is a three day process.

I was looking for a diabetic-friendly meal to make for my mom and found this: Easy Moroccan Stuffed Eggplant (beef or lamb)

It was so good!

I deviated only slightly from the recipe: I used a 50/50 mix of ground lamb and ground beef, and instead of serving on a whole half of eggplant, I sliced the eggplant into thick (1.5 inch) slabs before roasting and served each person two topped slabs. I did not top with pine nuts, as I didn’t have any, but otherwise, followed the rest of the recipe exactly.

I served it with syrian braised green beans and pita on the side for those who don’t need to watch their carbs. So good, it is definitely going into our rotation.

S made smoked turkey (H’s specialty) on our smoker yesterday to take to a party and brought the leftovers home for us to enjoy. He said everyone enjoyed it!

Aaaaaaand, the middle eastern trend continues with my first ever attempt at tahdig tonight. It worked!

Great job on the tahdig! Did you use a Persian rice cooker or just a pot on the stove? I have a Persian rice cooker that I use to make regular white basmati rice and will make the rice tahdig- but for other types of Persian dishes (polo- rice with lentils/dates or rice with dill/fava beans/chicken or ground meat, etc), I do a potato tahdig. Sometimes I will do white rice (parboiled) and make a tortilla or lavash tahdig. It is the ultimate sign of a good Persian cook to master tahdig😂.

I used a Dutch oven. Also I guess technically I made a tachin (it had meat layered in the center). Whatever it was, it was good!!!

I’m pretty sure I could eat that whole loaf! Bread is my Achilles heel.

Mine, too! It was delicious with raspberry jam.
