Whatcha Cooking? - Comfort Food Edition

If you like cabbage this is DELICIOUS. A perfect St. Pat’s Day or any day side dish. Be sure to cook long enough so it’s soft and “melty”. I went heavy handed on the cayenne because I like spicy. But the other spices really add to the depth. I added a little butter in addition to the olive oil. Served it with pork chops. Well, H won’t eat it but served it to myself!

This looks really good! I think I’ll make it with corned beef for St. Patrick’s day because colcannon is kind of bland

I made some colcannon this morning – not because of St. Patrick’s Day (although it works for that) – but just to use up some potatoes and cabbage.

As for bland – well, with enough butter and salt that obstacle is easily overcome! :slightly_smiling_face:

True! Butter and salt can enhance almost anything and cover a multitude of sins :wink:

DH felt like grilling steak tonight, served with a nice bottle of wine, cauliflower mash, and steamed spinach.

The other day, a preschooler told me that butter is his favorite food, and I was like come to think of it, it’s mine too!

We are having champ tonight, which is another excellent vehicle for butter.

Champ is the Northern Irish version of Colcannon, made with spring onions, or scallions instead of cabbage or kale. However, I cheated and made it with leeks.

Finally made the IP Pork Stew with Red Wine and Olives that @HImom posted above. It was very tasty but will serve it over Palmini rice next time.

I love champ as well!

DH and I split a grilled Cornish game hen with steamed broccoli and new-to-us roasted radishes (prepared the same as roasted redskins). They’re a keeper.

When we were first married I would roast Cornish hens. Haven’t thought of them in YEARS.
I roasted some radish in the fall, last of the crop. They get a sweetness to them!

Not a terribly exciting meal last night (we had BBQ chicken on the grill, roasted broccoli, sweet potato fries, baked apple slices w/cinnamon). But my college freshman is visiting and when I put the plates on the table he said “this looks really good, thanks mom” and it just made my day. I’m an average cook. I do not particularly enjoy cooking and I’m not creative with it. But it felt so good just to have my boy be happy and to sit and eat together. He’s my youngest, and I really miss him a lot when he’s at school. It’s going to be rough for me on Sunday when he heads back.

Good job mom! I’m sure the meal was better than the cafeteria food! Or maybe his own cooking!

He’s on a full meal plan, so the bar isn’t terribly high to beat the cafeteria food. :slight_smile:

What will be interesting is next year - he’s asserted he only needs the meal plan with about 7 meals a week (he’ll be living off campus) because he’ll make the rest. Ok. But he’s planning on those meals on campus being lunch. I was all “uh, are you serious? Lunch is the easier meal to make. You should have dinner on campus because you don’t cook.” The likely reality is probably in the middle now that’s signing up for the fall course schedule. I think he’ll have to eat dinner on campus Tues/Thurs, he’ll be done so early Wed/Fri he probably won’t come back, and Monday he’ll probably be there long enough for both meals.

We had leftover corned beef & cabbage for another few meals so ended up with 5 servings from 3# of corned beef and a head of cabbage. We will use the last of the potatoes and cabbage as a soup for lunch because we have a hearty prime rib dinner tonight at a restaurant before the theater.

Has anyone tried sunflower butter as a substitute for tahini in hummus or white bean dips? My grandson has a sesame allergy. I’ve also seen some nut butters as possible ideas but my daughter is allergic to peanuts and almonds.
