Whatcha Cooking? - Comfort Food Edition

I’m going to try the corn salad for dinner this week. I’m pulling it from the July 4th menu since one daughter told me she doesn’t like corn.

The corn salad was okay not great. I don’t think I’d make it again unless I needed dairy and egg free. I think I missed the salty flavor that a feta or Mexican cheese brings to the salad.

I made pork shoulder chop stew with green olives—something I really enjoy. Made enough to give some to neighbors who are moving to NYC. We’ve really gotten to know them better over the past decade and will really miss them. They’ve been living here longer than us, over 40 years! Oh well, we visit S in NYC and hopefully can meet up there.

Sea scallops are my favorite….and usually make them with a velvety risotto but I love polenta as well and brown butter makes everything better! Yummmmm :face_savoring_food:. Saved this one!

I wasn’t sure where to put this but I think it can qualify as a comfort food - s’mores!!

We are on vacation and tonight we had a big fire at our firepit. We had the mostly typical “s’mores” - chocolate graham crackers, marshmallow and either Hershey’s milk chocolate or Reese’s. BUT we had a new type and let me tell you it was WILDLY popular: ritz cracker, toasted marshmallow and LEMON CURD! Tasted Like a warm, gooey bite of lemon meringue pie! :lemon:

I’ve seen suggestions for savory s’mores with cheese!

Interesting! So the cheese in place of a marshmallow and then other items??

We did savory S’mores over the 4th with Babybels, rosemary crackers, and salami.

Yes! @ChoatieMom gave a splendid example!

I like this idea as I’m not a typical s’mores fan. But I highly recommend the lemon curd ones! I also think graham crackers are a boring vessel - I prefer either a shortbread cookie like a Lorna Doone or roasting a Rice Krispie and simply adding a little chocolate to it once roasted

Putting on list…

A fire roasted rice crispie with some very dark chocolate to balance out the sugar onslaught sounds delicious!

I have seen several TikTok videos for “savory s’mores”.

I’m making my lists for our annual family lake vacation. Trying to plan for picky toddlers and have everything be dairy, egg, sesame and mustard free is challenging.
Any good ideas?

We have just returned from our family getaway! My dinner menu:

Hamburgers, brats or hot dogs, spaghetti, pigs in blankets, pulled pork. Lots of produce and Mac and cheese available for the picky eater.

Made this haddock succotash recipe from New England magazine for dinner tonight. It’s a keeper and also guest-worthy:

LOL, that is not succotash.

I know. I won’t eat Lima beans, so this version passed muster. It’s really just sautéed mixed vegetables.

Easy take on s’mores. Marshmallows and (purchased) schoolboy cookies (shortbread with layer of chocolate)

Stupid thing of the day… open this thread before I’ve had breakfast.

I’m now sitting at my desk, imagining a zillion different kinds of smores for breakfast. Which i will not have, because cottage cheese doesn’t smore and that’s what I’ve got…
