My Paula Dean Crock Pot Mac and Cheese came out just delicious!! Since I just had a little oral surgery, it’s what I’ll be eating for days.
Saw a recipe for Campfire S’mores Dip (for those who like marshmallows) and thought of this thread.
Deconstructed Grilled Romaine Caesar Salad
Had something like this at a restaurant recently, and recreated it at home last night. It was delicious, and looked really elegant on the plate. It came together very quickly - we grilled the romaine and bread after taking steak off the grill to rest.
This recipe serves 4.
2 heads of romaine, trimmed off floppy outer leaves
2 slices of sourdough, or other sturdy bread
mayo, garlic, lemon juice, dijon mustard, Worcestershire sauce, parmesan cheese
slice romaine hearts in half, leaving the stem intact so the leaves stay together during grilling. Give a wash and let dry fully.
While they are drying, make dressing. I use this recipe: https://cookieandkate.com/caesar-dressing-recipe/
Place cut/open side of romaine hearts up, Drizzle with olive oil and season with s&p.
Drizzle bread on both sides with olive oil, and optionally, garlic powder.
Grill romaine hearts, face down for a few minutes on medium-heat covered grill. Just enough to char the face a bit and soften/heat the rest. Remove, and grill bread lightly on both sides. Remove from grill and slice each in half.
To plate:
Put a healthy smear of dressing on each plate, top with one half grilled heart, place grilled bread on top and dust with grated parmesan.
Serve with steak knife - so diners can cut components and drag through the dressing on the bottom.
Sounds AMAZING. ![]()
Pasta salad is comfort food, right?
I have been eating this pasta salad for 4 days and am not tired of it. I made extra dressing since it tends to get dry after a day or so. Put that on as I eat it.
Adjustments I made that are a
:
- used yogurt instead of sour cream for the dressing - less calories, more nutrition.
- I didn’t have cojita cheese so used a sharp white cheddar diced small.
- I added about 4-5 slices of bacon that I snip in small bites before frying so it’s like a small delight in the salad.
- I also add cherry tomatoes with each serving at time of eating so they don’t get mushy.
- I only used 1/2 box of pasta and reduced accordingly though was generous with vegetables. Still made a lot!
Really good for a crowd. Or just for yourself to eat for days! ![]()
Hopefully this link works for all (I saw no Gift option). I often can get good deals on chicken thighs, like to have new recipes
So I’d never heard of fideo. Figured I’d not search for some obscure pricey option… use vermicelli instead. Well silly me! I live an an area with lots of Mexican families but was still somehow clueless. Per google, my two main markets carry it - 7oz packages at King Soopers are 49cents, Safeway 79cents.
Looks good and hearty! My H won’t do the beans
but this would be a good comfort meal to make for company!
Yes, thighs are so much cheaper - and my H actually seems to prefer dark meat.
I’m finding myself sort of “over” chicken unless it play sort of a supporting role in a dish (like this) but is not just a hunk of meat.
We grilled pizzas the other night, and I had a lot of leftover sauce. I decided to doctor it up a bit as a base for vegetarian lasagne tonight. Aside from an occasional piece of toast from my own sourdough loaves, I don’t eat bread, pasta, rice, or noodles, so lasagne is not on our menu. However, I decided to try making it with Palmini Lasagne Noodles, and the result was outstanding. DH had two servings and said he couldn’t tell the difference. Definitely a keeper and an excellent use for leftover tomato-based sauces.
How many noodles in each of those pouches? It says three servings. Just wondered how many pouches to make a pan of lasagna?
Also, do you cook them before assembling the lasagna?
None of the Palmini products require cooking; you just rinse and use, saves so much time. There were 15 roughly 4" x 2" noodles in the package which perfectly made two layers in my 8 x 8 pan. If you use a standard lasagne pan with three layers, you’d probably need 3-4 packages (just a guess), but you could do the math on your pan.
I use Palmini (linguine, angel hair, rice) for all my “pasta” and “rice” dishes. The rice is also a good substitute for orzo in cold salads. They also make a surprisingly tasty mashed potato product, though I add garlic and other herbs/spices for more flavor.
Thanks for sharing! I read some reviews on some of the various shapes of that brand (not lasagna) that complained of, “crunchiness.” However, most were very positive. I will have to look for this product.
Most of the dishes I use Palmini for benefit from being a bit “al dente.” The makers suggest boiling the product for a few minutes to soften and remove the trace of hearts-of-palm acid for blander use.
I am not suggesting this product passes for its real counterpart undressed, side-by-side in a blind taste test. It doesn’t. But, it passes extremely well in sauced and spiced dishes.
I made this last night and H absolutely loved it. I served it with mashed potatoes and fresh green beans with butter and garlic.
Making my mouth water, @showmom858 !
That dish is guest-worthy. I also make it with salmon.
I’m intrigued (because I don’t care for chicken)…do you prepare the same way (pan sear the salmon and then finish in the sauce)?
The recipe is Tuscan Butter Salmon, but DH likes to grill the fish.
H is excited since there were leftovers for lunch today!
I will definitely use this recipe for guests in the future.
Thanks, @showmom858 . Just saved it.
Very similar to Marry Me Chicken which is also yum!
