What's for dinner at your house tonight?

Veggie stirfry tonight, grilled pork chops tomorrow, risotto on Wednesday. I’m giving D1 cooking lessons.

Leftover Bucatini all’Amartriciana (pasta) from D2’s sleepover on Saturday night (they cooked!). And, um, carmel brownies with ice cream (also leftover).

Just finished the menus for the week, on the way to the grocery:

Tomorrow night (busy evening), potstickers from the freezer (I make big batches and freeze them).

Wed - Hamburgers and peaches with blue cheese & honey on the grill (since fall is coming), and caprese salads (heirlooms from the farmer’s market this weekend)

Thursday - Rolled pork loin roasted with fresh rosemary, garlic, and red wine. With a butternut squash & apple gratin (squash from the farmer’s market again).

Friday - leftovers from Thursday. :)

Tonight it will be pork chops cooked in apple juice my mother left behind with sauted apples and onions. Side of green beans. Salad is heirloom tomatoes with fresh basil and extra virgin olive oil.

Yesterday it was chard soup with white beans and andouille sausage and a big salad.

I just picked up some (kosher) veal chops…now I need to find a recipe. It just seemed like something totally different than the usual.

Any one have a good recipe? I can adapt for kosher.

Salmon croquettes, mac and cheese (real, not boxed) and green beans. It’s one of our families comfort food dinners.

Veal chops are best rubbed with olive oil, seasoned, and grilled. Or pound thin - leave the bone in, bread with fresh crumbs and fry for Milanese style. Serve with lemon and arugula salad.

Tonight is burgers on the grill, grilled peaches (thanks, intparent), caprese salad, and broccoli. Tomorrow is a nice rack of lamb with garlic and rosemary, roasted potatoes, and green beans. Wednesday will be a casserole of chicken, artichokes, marsala wine, and mushrooms.

Salmon on the grill–brushed with a mixture of EVOO and soy sauce, sprinkled with lemon pepper–served with steamed baby carrots and rice pilaf leftover from last night. --A nice glass of pinot grigio…mustn’t forget the vino!

The second of two massive bone-in pork chops I grilled last night along with the second half of my variation on Cat Cora’s spicy hot sauce broccoli slaw:

1 TBS sugar
1 TBS mayo
1 TBS dijon mustard
1 TBS white balsamic (or rice) vinegar
1 TBS olive oil
1 TBS Franks Red Hot sauce
1 tsp celery seed
salt/pepper

12 ounce package brocolli slaw mix

Stuffed cabbage in sweet & sour tomato sauce. (I had a craving a couple of weeks ago and made up a bunch of rolls which I stashed in the freezer.) Steamed green beans from my garden.

Home-made carmel apple (rolled in chopped peanuts!) for dessert.

Since I’m having dental surgery tomorrow—dinner will homemade mushroom bisque made with 3 kinds of mushrooms. Maybe a crusty dinner roll if my mouth isn’t too sore.

Great Thread! At the moment it’s salad but the tables (and my brain) are turning…gotta print off the brocolli slaw mix recipe. Is that a Tablespoon of Red Hot sauce?

Wow you people are good planners and creative cooks!

I ended up pulling out some butter garlic chicken and a couple of jalape

I came home to dinner in the slow cooker. This morning I put in: 4 chicken breasts, some diced peppers, sliced onions and carrots, a can of chick peas, some dried parsley, a can of diced tomatoes, salt and pepper. Serving it on rice.

Boneless chicken breasts on the grill (basted with a mix of oil, dijon, worcestershire, Frank’s), Jasmati Rice, and a green veggie…

Probably some rice & lentil pilaf (Near East brand) with sauteed green beans. It’s a busy time of year for me!

Chicken cacciatore, my non-thinking go-to recipe. I am so sick of trying to think of different kosher chicken recipes. Ugh. It’s almost worth converting to try a casserole for a change! With cheese! I’m jealous of you who think ahead a whole week and shop appropriately. If only I were that organized…

I also made fish tacos last night with Tilapia! S2 loves fish even more than his parents!

Tonight I’m just heating up a store bought meatball calzone (from Stew Leonards) and homemade fresh tomato sauce with string beans from my garden…

I like to make homemade soups as the weather gets cooler…adding in Kale or TJ’s chopped spinach, lots of things, beans, onions, carrots, etc.

or chili with black beans…

a few nights ago we had a bunch of very ripe nectarines, so I made entree salads with all the nectarines cut up…feta cheese…persian baby cucumbers…dried cranberries, etc. delicious!

Pasta puttanesca and spinach salad tonight.

Greek turkey burgers (with feta and spinach) and mashed sweet potatoes tomorrow.

Turkey, pesto, brie, sun-dried tomato paninis and waldorf salad on Wednesday.

Threekids: Some unsweetened coconut milk will let you make creamy casseroles with chicken…or substitute browned tofu or a can of albacore tuna for the chicken in the recipe.

thanks, gourmetmom!

Along with a tossed salad, I’m making Jamie Deen’s grilled lemon rosemary chicken

from her last cookbook, How Easy is That. Panko salmon is another recipe of hers that is quick and easy enough to make on a busy day:
