(I’m not a “foodie,” I’m a “FAST foodie.”)</p>
<p>You guys have great ideas! We had chicken-not-pie; it’s just like pot pie but no crust (celiac household). I cook chicken breasts overnight in a crockpot, break them down before I leave for work. When I get home, we simmer stock, potatos, green beans, carrots, corn (in that order) and then put the chicken in. Add some thyme and lemon juice and it’s all done in about 20 minutes.</p>
<p>Just finished SAMs club roasted chicken and microwaved sweet potatoes. And, SAMs club packaged Asian Slaw salad- sell for 2.58----and they sell garden salad version - cranberries, slivered almonds, bacon bits- packaged yummy dressing !!! Love these salads!! !!!</p>
<p>I mixed up some tuna salad. If I am feeling really generous, I might toast hubby’s bread for him. The empty nest is not so bad. I did cut up some cantelope.</p>
<p>I was in the mood for Giant Eagle’s chicken pot pies, but when I got there, they were sold out. Chillly day, so everyone must be thinking of them. Ugh! Had to cook something fast, so have veal marsala on the cooktop. The side is one of those bags of Birds Eye pasta and veggies.</p>
<p>MD Mom, I’m feeling it, too. Ahh . . . the joys of the empty nest. </p>
<p>Regarding fish tacos upthread. Here’s a cheater’s delight version that is surprisingly healthy and everyone – even my kid who hates fish – loves:</p>
<p>El Paso Stand and Deliver Taco Kit (tacos, seasoning, salsa)</p>
<p>Wild flash frozen Mahi Mahi from Costco. I use about six pieces for four of us.</p>
<p>Salad stuff. Grated Cheese. Various salsas. Microwave a can of black beans.</p>
<p>Just use the Mahi Mahi (defrosted in a pan of water for 20 minutes) in place of the ground beef. Use about half the packet of seasoning, otherwise way too salty.</p>
<p>When the fish is just tender and done – not over done, scoop into the taco shells that have been warmed in the oven. </p>
<p>Great dinner – they think I’m brilliant!</p>
<p>Out to a trivia night at a local wing place, but tomorrow will be grilled shrimp kabobs with risotto.</p>
<p>Goofing off tonight. Called Carryout Courier and ordered Vegetarian Green Curry (added my own tofu cubes at home, so I guess that will serve as my meal making contribution), popped open a glass of pinot grigio, and after I fool around on the Parent Cafe, I am heading off to bed with my Kindle.</p>

<p>I made Indian food. I had leftover dal (curried lentils), made a curry sauce to have with sauteed fish and steamed spinach. Greek yogurt and garlic pickle. Now we have more leftovers for tomorrow. I had already goofed off most of the day, so a little effort was in order.</p>

<p>Salad with tomatoes, nuts, feta and whole wheat pasta topped with tomato sauce full of Aubergine, zucchini, onion, fresh basil and love. ;)</p>
<p>I showed DH the pork shoulder roast I got on sale and asked him, “How many meals do you think we can get out of this one?”</p>
<p>We ate roast pork with white rice and veggies and tonight it will be shredded pork tacos. I will freeze the leftovers for another time.</p>
<p>Last week, I squeezed 3 meals from a roast chicken. Cooking for three (one of us is a 10 yr old) has been quite fun and economical!</p>
<p>Did make shephard’s pie using ground turkey last week.</p>
<p>Sauteed tilapia filets with butter and caper sauce over wild rice with steamed broccoli with a butter lemon sauce…ooh, it was so good.</p>

<p>We had a concoction we call “super salad”. To start, I tear up a bunch a lettuce and cut up a cucumber. </p>
<p>Then I dig through the pantry and the fridge to find things to make a salad bar. I was able to find avocado, garbanzos, grape tomatoes, kalamata olives, craisins, crumbled blue cheese, crumbled feta, garlic croutons, chopped apple, good deli roast beef, shredded cheddar, and sunflower seeds. </p>
<p>Add a fresh baguette and everyone is happy.</p>
<p>I’ve been eating fresh tortillas for lunch with avocado, quesa fresco, black beans & salsa & was going to have those things on the side w baked potatoes for dinner, but H wanted a frozen pot pie, so I had a bowl of corn flakes.
