What's for dinner at your house tonight?

<p>I made two ham and potato casseroles, and took one over to my mil’s house. I’m hoping it wasn’t my last hot meal this week.</p>

<p>Linguini with Herb Broth and Clams (used capellini instead of linguini) from epicurious.com, avocado-grapefruit-arugula salad, and Grilled Marinated Eggplant (also from epi). Nice mix of flavors and textures.</p>

<p>Busdriver - I think with the sauce, tomatoes - I would add zero water. I add very little water to anything in the crock pot. Sometimes a can of french onion soup- maybe a half can of coke … but I think with those ingredients - I would not add any water.</p>

<p>I throw in a roast, veggies, and a envelope of onion soup - and add zero water - turns out just fine.</p>

<p>I cooked up a soup and two quiches to use up things in the fridge.</p>

<p>Meatloaf, fresh mashed potatoes, tri color pepper, zucchini, squash, mushroom and pineapple stir fry. Cauliflower bean soup made for the week, fresh pinneapple and soy yogurt for desert.</p>

<p>Thanks, Mater. I’ll try no water. Interesting, I thought it would burn. I don’t know about adding coke…that sounds kind of gross with chicken and vegetables!</p>

<p>Well Coke is good with a roast! Maybe not chicken! :slight_smile: Just pam the pan first. The science of the crock pot is it uses the water in the food - so if you have veggies and frozen chicken for sure - my guess is it would be fine. Maybe 1/3 cup of chicken broth - but that should be more than enough to be safe.</p>

<p>Pot Roast tonight. Interesteddad’s marvelous recipe from Marcella Hazan’s classic “Essentials of Classic Italian cooking.” It’s done in a dutch oven, stove top for me since my electric ovens will probably lose power later today.</p>

<p>The fancy lentils with the white turnip and leeks were lousy! Too darn salty – called for a whole table spoon of Kosher salt plus two tablespoons of red wine vinegar. Just tasted bad. Oh well, never know till you give it a try.</p>

<p>We had salmon which I marinated in some leftover Jam Jar wine which is leftover from a long ago wine tasting. (Sweet red -syrah is not my thing.) Added a bit of balsamic vinegar. Sauteed at a fairly high heat then added the leftover wine/vinegar and cooked it down to a glaze. Had a mix of weird CSA sweet potatoes boiled then sauted will shallots and pears and some steamed kale. Pretty good meal.</p>

<p>Sewhappy, sometimes if a recipe seems unreasonable it’s worth considering that their might be a typo - perhaps it was only supposed to be a tsp?</p>

<p>Hopefully a hot meal! To be determined depending on the power situation at 5:30.</p>

<p>Your’re so right, mathmom – I went ahead and suspended my disbelief on so much salt because the lentils were cooked in just water, not broth. Then all that red wine vinegar. Oh, so disappointing. Normally I have very good luck with recipes from Ina Garten (Barefoot Contessa).</p>

<p>Mathmom – you have tremendous flair at pulling together menus from unusual combinations of fresh foods. I think that calls for a lot of confidence. I want to get better at not being so slavish to running out for the perpetual “list” and just cook with what I have on hand.</p>

<p>“Swiss mistake” here. Swiss steak made with mushroom soup, stewed tomatoes and a jar of salsa, with green beans cooked in with it. My daughters have always loved it served over noodles.</p>

<p>Overseas, thanks for mentioning your quiches. Since I was unexpectedly home and still with power this morning, I baked a new quiche that was quite delicious. Tonight, it’s leftover mock-cassoulet, which so far looks as though it will not have to be warmed over a candle!</p>

<p>We still have power! Had cocktail mini hotdogs, spanikopitas and other great apps (and pinot grigio) at our neighbor’s impromptu Sandy party! Now DH is making meatballs and sausage. :)</p>

<p>We still have power, but I had a frozen oven browned turkey breast from Costco that I thawed out in case we lost power, since it’s already cooked…so H & S had cold turkey wraps for dinner. </p>

<p>I’m eating my sweet potato, shallots and cauliflower soup now as I write on cc! Not quite as good as other soup concoctions I make, but not totally bad…just say I may not rush to make this same combination again! ;)</p>

<p>hot sandwiches: deli roast beef & diced ortega chilis with jack or swiss cheese, grilled on sourdough with lettuce & tomato. Yum</p>

<p>Spicy chili, salad with avocado, and oranges for dessert - - for a cold and blustery night!</p>
