What's for dinner at your house tonight?

<p>I’ve been sitting at the dealership for repairs for over 5hrs, I’m over an hour from home, add 30-45min for traffic if I don’t get out of here soon. It’s not likely anything is going to happen with that chicken in the fridge. Luckily I just remembered there’s a Trader Joes on the way home. I rarely go because its not in my usual direction, but tonight I think I’ll pick up something prepared/semi prepared. Any Trader Joe regulars with suggestions for something yummy but quick? We’re not picky eaters. About the only thing DH & the kids won’t eat is tofu.</p>

<p>Chicken sausage (whatever flavor you like) with onions and sweet red peppers. Pizzas…Marinated beef with rice…frozen penne with arrabiata …raviolis…with pesto sauce sauce, cookies for dessert…microwave veggies…</p>

<p>…oh, and a stop at the wine section…I think you deserve it.</p>

<p>Since it’s snowing, I got to leave work early so my plan for a pizza dinner is scuttled. Now I’m thinking about shepherd’s pie and some warm rolls - hearty food for wintertime.</p>

<p>I will do my super easy spaghetti tonight: Barilla Marinara from a jar, Costco organic ground beef, and right before serving a few spoonfuls of cream in the sauce – makes it taste like a bolognese. Then a dish of olives, green salad with tarragon dressing. No bread! Ice cream bar for dessert.</p>

<p>I was planning to have mil’s matzoh ball soup with salad for dinner, but since it snowed today I feel like something heartier. It’s 5pm and I have no idea! :frowning: Maybe I’ll send H out for takeout…along with the soup!</p>

<p>Snowing in New Jersey and New York…same poor folks who were hit by Sandy last week.</p>

<p>I just had a lasagna roll up with meatballs in marinara sauce.</p>

<p>We had a great dinner! When we go to Epcot, one of our favorite quick serve places is the bakery in Norway: Kringla. They have a ham and apple sandwich that is just delicious. My D found a recipe for it online. So, we had Kringla sandwiches, salad with apples, cranberries, candied walnuts, and blue cheese with a raspberry dressing and sweet potato fries. The sandwich came very close to the original. Yumm…</p>

<p>yah abasket: I’m in New England. Snow coating still on the ground…haven’t had my Fall leaves raked yet! :eek: Should turn to rain tonight and tomorrow and hopefully wash coating away…</p>

<p>Defrosting chicken thighs and pierogi for tomorrow nights dinner. Some combination, huh? ;)</p>

<p>My grandmother used to make pierogis from scratch, with different stuffings - mashed potatoes, chopped cabbage, or prunes.</p>

<p>After boiling them, she would saute some of them in a frying pan with butter, to crisp them up a bit. Those were the best ones. :D</p>

<p>I have a defrosted chuck roast and could make Idad’s Italian pot roast but I could also just get some pizza. We don’t want to go out. Lots of new snow here and with Sandy the workers are not really on top of clearing the roads.</p>

<p>It’s a bad idea to read this thread when you are at work, getting hungry close to lunchtime…makes whatever I brought not seem like enough!!!</p>

<p>Thick soup (my mother’s recipe), salad and bread.</p>

<p>Big pot of chicken cacciatore simmering on the stove. Figure it will feed me all weekend long.</p>

<p>meat version: </p>

<p>(I don’t do this by pounds. but by pieces of short ribs) 10 short ribs
whole onion
carrots (I use baby carrots…because I am lazy)
1 rib of celery
1 turnip
1 parsnip
2 sleeves of Manachevitz vegetable soup mix with mushrooms.</p>

<p>In a large soup pot put in all the ingredients. Cover everything with water. (I imagine that if one is a vegetarian you can omit the beef)</p>

<p>Bring to a boil…cover and put the flame on simmer. Check and stir every hour. When the meat is cooked through (about 2 hours). Turn off the flame. Add instant mashed potatoes…1/3 of a cup to start. Turn onto simmer and see how thick the soup is…put in the the tiny packets from the Manischevitz . packaging…add more instant mashed potatoes, if desired. Adjust seasonings…salt and pepper. I take out the parsnip/turnup and onion…cool them and give it to the dogs)…Serve…this makes enough for two dinner and a snack or two</p>

<p>In the last few minutes you can add some noodles as well. (Obviously you can halve this as well).</p>

<p>So many dinners sound great. Chicken cacciatore sounds wonderful!</p>
