What's for dinner at your house tonight?

First night in 3 weeks my H has been home for dinner. I made chili and a caesar salad.

It’s RAINING!!! I don’t go out in the rain…We are weather weenies. So we’re ordering in.

I had cheese and crackers, left over slice of pizza and a very large glass of white merlot. A perfect end to a good weekend.

I made fried potatoes with chanterelles (1:3 ratio of spuds to mushrooms :)) and cucumber salad with yogurt dressing.

I made Costco wild sockey salmon on the stove in olive oil and a little butter and the juice from half of a lemon. Brown rice. Costco frozen fire roasted veggies. Easy and good.

Tonight will be Italian sausage/onion/pepper sandwiches with a warm German potato salad.

I want this!!! ^^^^^^^^^^^

Thanks for all the sweet potato recipes! I haven’t been on CC for a few days so I am late thanking ya"ll for replying to my plea for a good recipe.

buttermilk pancakes and really good maple syrup, with a side of sausage patties…cold weather makes me want breaskfast for supper! :-)

Last night I made my beef stew as it’s one of DS’s favorites and he is home on break. Tonight, since it is my b’day, H better have made reservation somewhere - though the choices are pretty slim seeing as it’s a Monday. :(

I have some haddock and I’m wondering about a pecan crust for it. The only recipes I can find for pecan crusted fish have lots of bread crumbs and H is watching carbs. I’m wondering if I could dip the filets in a beaten egg and then dredge in chopped pecans. Anyone ever try something like that? Maybe I’ll try half of the filets that way and half with an her mixture or grated parmesan. I also have kale and spinach, so I’ll saute one of them in olive oil and garlic.

I’m getting repetitive. Tonight wild mahi mahi from costco cooked in olive oil, a bit of butter and squeeze of lemon. Brown rice. Frozen veggies. We are being very good. And it’s easy and yum.

Stir-fried steak tips w/onions, and a salad.

The pecan crust actually worked well. Yum!

Stir fried sugar peas with a glass of Pinot Grigio. I took my daughter to lunch. Cut back at dinner time. ;)

Spinach and Cheese tortellini, Chicken and Artichoke sausages with a side of roasted brussel sprouts topped with parmesian and red pepper flakes. For dessert - fresh organic raspberries topped with coconut balsamic and Persian Lime olive oil. Except for the balsamic and the olive oil…all courtesy of Costco.

Pan grilled beef filet with mushroom-thyme pan sauce, baked potato and a green salad.

Last night was Cajun bean soup.

A suggestion for the sweet potatoes…I’ve been melting a small amount of coconut oil in a well seasoned cast iron pan, cut the sweet potatoes into halves and put cut side down in pan. Brush the skins with a little more coconut oil and stick pan in oven. Don’t preheat…just turn it up to 375 ( I use 365 on convection).

In about 30 minutes they are golden brown with a bit of crisp on the side facing the pan, the insides are yummy creamy smooth and the skin is quite tasty. The coconut oil lends a mild sweet taste without the use of sugar.

I having leftover pork roast from the Weber grill last night, along with my slight variation on Cat Cora’s Spicy Brocolli Slaw. Homemade thin vinegary bbq sauce on the pork.

Wanted shrimp pad Thai. Had no pad Thai noodles so substituted ramen noodles. Tasted good but the texture was wrong. Oh well, used up lots of bits and drabs of veggies…two carrots, four scallions, half a red bell pepper, and even tossed in half a cucumber (diced up) at the end. If there’s lime, cilantro and diced peanuts on top, I call it good.
