<p>1moremom: We’re in the Pacific Northwest. Our cukes are starting to dwindle. We too have been eating “greek” salad with tomatoes, cukes, feta, with balsamic vinegar and avocado. That is if I get out to the garden before DH or the kids who will eat an entire cucumber dipped in blue cheese dressing.</p>
<p>I’ve been sick, too, and I would sell my husband for a bowl of hot vegetable soup.</p>
<p>Thanks for this thread. We’ve been doing too much ‘Where do we eat tonight?’ and not enough ‘What do we eat tonight?’ lately. I appreciate the great ideas. It’s been so hot I hadn’t even thought about the grill for a while! Also loved the chicken no-pie idea and the various fish dishes. We so rarely cook fish, but like it. Tonight for us will be leftover take out chinese from last night.</p>

<p>One of my favorites. We use peanut sauce instead of hoisin sauce and don’t use mushrooms…</p>
<p>I roasted asparagus, mushrooms, red potatoes and brussel sprouts yesterday…enough to last for several evenings. Last night they were served with mushroom and spinach tortellini and tonight they’ll be served with a store roasted chicken.</p>
<p>Dessert…organic strawberries with vanilla sugar.</p>

Just add couscous or some kind of rice and a salad.</p>
<p>I like to throw leftover roasted veggies into a tortilla with cheese and maybe some greens for a quick meal.</p>
<p>Grilling tonight. Jumbo shrimp, in the shell, on skewers, marinated in olive oil, lemon and garlic. Grilled over charcoal. Fresh asparagus grilled on the same fire.</p>

<p>Had planned to try a new recipe tomorrow. Braised beef short ribs – braised in red wine, garlic, and rosemary. I had this as a special in a restaurant last week and the rosemary gave it a nice kick. I want to add it to my repertoire.</p>
<p>But, the short ribs at the grocery didn’t look all that great (for a lot of money), so I’m doing the same recipe with pot roast that I’ll probably cut into big 3 inch cubes. I guess I could call it “Poor Man’s Braised Short Ribs”.
I’ll be serving that with roasted brussel sprouts.</p>
<p>ITdad, I use beef short ribs all the time, and never pay more than $5 a pound. Sometimes I have the butcher got pieces in half. I cook them in crock pot with either wine mixture, or add tomatoes and mushrooms. I use them in vegetable or cabbage soup. I am not a big meat eater, but a few ribs add so much flavor. If the short ribs don’t look good, I buy flanken.</p>

<p>I make our Tilapia similar to your recipe, but I add a thin layer of seasoned bread crumbs and for some reason everyone likes it better that way! If it’s not healthy enough, oh well! They eat it and that’s all that matters! ;)</p>

<p>Do most people have dessert after dinner?? We almost never do except when we have company…but my mil always serves fruit and something sweet…many times we just incorporate fresh fruit into our dinner meal…</p>

<p>Yeah. I think these were about $5 a pound. Of course, you are paying for a lot of bone. They just didn’t have the combo I was looking for. One package was big meaty short ribs (that’s what I was looking for), but not enough. The other packages were all little scrawny ribs.</p>
<p>I’ve learned not to force it at the grocery store. If what you have in mind doesn’t look that great that day, flip the script and go a different direction. I’ll do the short ribs another day…</p>

<p>Today grilled steak and chard with pomegranate seeds, zahtar (my new favorite spice mix), and a sauce of greek yogurt, creme fraiche and lemon. And salad.</p>

<p>We never do right after dinner, but will often have a little something later in the evening. We enjoy pastry, but try to eat fruit more often!</p>
<p>We always have fruit with dinner. Our after dinner treat is low fat or fat free frozen yogurt. We don’t have it every night but probably have it a few nights a week.</p>
<p>We rarely have dessert, but if dh goes traveling he usually brings back fancy chocolates and I eat them one a day until they are gone. Generally I get enough dessert from neighborhood parties, holidays, and family birthdays.</p>
<p>We had great desserts at a fundraiser tonight. Yummy little finger foods of layered chocolate, lemon bars, gingerbread. I had to be dragged away.</p>
