Mathmom, your pork roast sounds so good!

Tonight I chopped up my remaining turkey sausage patties and put them in a mushroom and onion cream sauce. Served with buttermilk mashed potatoes, toasted biscuits, and sliced apples.

I made outstanding buffalo chicken wings (my first time ever deep frying in lard!) and blue cheese dip for some celery and carrots. This recipe is a major production (especially the cleanup), but it’s a real treat.

The pork roast is super simple. I don’t even use a recipe.

Take one 3 pound boneless roast. Take a big knife and poke it all the way through, you may have to go at it from both ends. Make a cross shaped hole or in todays case more of a double sided E. Mix in a small cup - salt, pepper and a pinch of cayenne. Sprinkle inside and outside the roast. Stuff it with as many prunes as will fit. (I think it was about a cup.) You can use toothpicks to hold the ends closed. Brown it in some butter then pour some vermouth or dry white wine till there’s at least 1/4" in the pan. Baste it every 20 minutes or so adding more wine or water if it dries out. The sugar from the prunes makes the sauce burn so it’s important to keep the liquids in the pan. Cook until a thermometer reads 150 - depending on the shape of the roast it will be more or less an hour.

Tonight Vegan Hoppin John’s made with vegan saugage, brown rice, black eyed peas, tomatoes, onions and fresh parsely, glass of white merlot and cara cara oranges.

Tried my first ever risotto last night - the taste was ok but the rice was still a little crunchy despite my using more liquid than called for and cooking for a longer time. Did I have the heat too high or what?
