Tonight I have some real veal cutlets that I’m going to stuff with ricotta cheese and spinach, roll them up, dip in egg mixture and then cover with whole wheat bread crumbs and bake. I’ve done this with chicken before, so I’m sure similar taste with the veal.

Yucatan tamales and salad. mmmmm

Pecan crusted tilapia, sauteed spinach and some sort of starch. Probably brown rice…

You’ll notice that all of my dinners take 15 minutes or less to prepare. I am just not a cook. But I like to eat. Maybe that’s why we eat out so often??

Ccc, that sounds really good!!

Chili over brown rice and I think I’ll steal from megpmom and do sauteed spinach for a side.

Abasket:

A girlfriend of mine introduced me to Skinnytaste and it’s the recipe titled, “Chicken Rollatini with Spinach alla Parmigiana”. It’s much easier to make then the recipe makes you believe. In fact, my S2 is the best roller and dipper around, so I always have him help me when I make this.

Just finished dinner and the veal cutlets were too small to stuff, so we just dipped them in eggwash and breaded them with the whole wheat breadcrumbs and baked plain with no stuffing. Had Spinach on the side, which sounds like a popular choice tonight! ;)

Let me know if you are able to locate this recipe…it’s quite yummy.

I’ve made recipes from Skinnytaste before!! Great resource !

Mexican stuffed sweet potatoes! Yum!

I haven’t posted to this thread before, but do stop by to read from time to time.

My H works evenings, D is away at college, so usually it is just S HS’16 and me at home. He is a skinny, skinny picky eater, so I don’t cook alot.

Tonight I did cook and made Iowa chops, green beans, baked potatoes for S and baked yam for me, and had fresh vieggies with ranch dip out. S actually ate it. Well, only a couple of bites of the chop, but a plateful of everything else. I guess it was a success.

Pan cooked lobster at a restaurant in Chelsea with a glass of white wine.

Leftovers.

Made mathmom’s salmon with red wine reduction (used 2c. beaujolais 1c marsala) Really lovely thanks for posting mathmom!
