I would love some suggestions of mid sized schools (5,000-20,000) that have a neuroscience major, undergraduate research opportunities, a good reputation nationwide, an overall liberal leaning student body, and that I could get into lol.

It would seem that UNC-Chapel Hill would be a great option for you all around. Too close to home?

If religion is important for you, Yeshiva

Here are a mix of options in New England with varying degrees of difficulty of admission - all are NSF REU sites for Biology, all are research level one except Vermont which is level two. All have undergrad neuro majors except Tufts which calls it Bio-psych.

University of Vermont - Small Public U with Med School - Neuro REU site
Boston University - Large Private U with Med School in downtown Boston
Brandeis - Small Private U just outside of Boston - No Med school, but known for Neuro
Tufts - Small Private U just outside Boston with Med School (in Boston) - brand new Neuro labs (in SEC).
