Which is more appealing for admission?

I plan to apply to very competitive colleges (Ivies, Vanderbilt, UChicago, UNC Chapel Hill, William&Mary, Emory, etc…). I feel I have a competitive chance with my grades and scores. However, my question regards my Ecs.

Throughout my high school career, I tried to focus on my main interest, which is education. I have spent countless hours putting effort into this, between the organizations I am involved in, the club I started, and raising awareness in educational/children’s rights issues. This is of course what I will focus on when applying.

However, I do plan to major in biology. Will this matter that I have not focused on science Ecs instead? I have the opportunity to intern for the local aquarium next summer or teaching kids at the local orphanage. Should I continue my educational focus or add diversity and take the internship for the aquarium (it focuses on marine biology obviously). It is not a matter of enjoyment because I feel either would be equally enjoyable to me, I am passionate about both. However, they are both a serious time commitment, so I cannot take both positions…Advice?

(Btw, I do have other non-focus Ecs to back up my application, however I wanted my primary focus to be on education)
