Your Best Vegetable Lasagna Recipe

^^That sounds amazing! I’ve been doing “zoodles” for a while, and trying to cut down on carbs, and that’s a really cool way to use zucchini that I hadn’t considered yet.

I was going to say that I shy away from using zucchini as noodles because IMO, zucchini doesn’t have much flavor. But, come to think of it, neither do lasagna noodles!

It was surprisingly tasty and if you have huge zucchini, you can get quite a few “noodles” from each one. I’m a low carb person and think I will give it s try. H can’t eat lactose and is low gluten, so we generally don’t have much lasagna–it’s not the same when you have to find alternatives to cheese and lactose.
