Easter is my holiday to host. I don’t really love being an entertainer!
We typically have 2 main dishes. Everyone who comes contributes. Probably around a dozen people are together. For years the two main dishes have been turkey and kraut and sausage (yeah I know, odd combo, but my sis in law insisted on bringing it for years!) . Besides my husband no one is a ham fan so we don’t do ham.
It’s rumored that my sis in law doesn’t want to bring kraut and sausage this year - yeah! But I’m thinking of what I want for a second “main” of sorts. I was thinking a very good, somewhat healthy but also somewhat not healthy veggie lasagna. If I can put it together the day before all the better. Something with lots of flavor. Something with not 100 steps. Is that enough requirements???
We will have other sides of course that are veggie related, but I thought this might go over well.
BTW–only make this with fresh pasta. The store bought dried pasta (pastasciutta) does not work well with this recipe. Mario makes this as individual servings, but I have made it in a classic lasagna pan and it works out just fine.
Here it is - it is a modification of this recipe. Use panko crumbs and Italian spices to make my own Italian crumb mix. Organic pasta sauce instead of Chunky Prego (which is yuck), and ground turkey instead of beef. Other than that, I follow the recipe pretty much. No noodles! Use the leftover panko crumbs/Parmesan mix to sprinkle the top of the lasagna for a crusty yumm.
Years ago, Gourmet Magazine had a Roasted Asparagus and Goat Cheese Lasagna recipe that was to die for. I believe the recipe is still available on the FoodNetwork Website.
This is a very basic, tasty vegetable lasagne recipe, from Jane Brody. What I do differently is use all ricotta instead of cottage cheese, and I find it takes more noodles and sauce than the recipe calls for. I make vegetable lasagne with parmesan/romano bechamel with nutmeg, spinach, jullienned carrots, fresh mozzarella, ricotta, egg, S&P, etc. I don’t have a recipe .
A whole half poached salmon with cucumber dill sauce or an orange herb butter is a great main dish for Easter.
I have a great recipe for roasted veggie lasagna. Everyone loves it! I am travelling at the moment but can send you the recipe when I get home on Sunday or Monday if that isn’t too late, @abasket.

Here’s the recipe for roasted asparagus and goat cheese lasagna that I mentioned in my earlier post. Sooooo good. You can sub half or all the goat cheese with cream cheese if you aren’t a goat cheese fan. A nice recipe for around Easter time.
I once had a portobello mushroom lasagna. No idea what the recipe was, but didn’t miss the meat. At Williams-Sonoma we learned to make a lasagna with long strips of zucchini for noodles instead of pasta. It was very tasty.
