Your Favorite Grilled Chicken Marinade

<p>Going to be having a family cookout Sunday. Theme is just a good ole summer barbeque. Typical sides - baked beans, watermelon, fresh veggie salads, etc. </p>

<p>Probably going to grill. Maybe a couple hamburgers, hot dogs and some chicken. Usually just use a teriyaki marinade, but looking for something new! Maybe something a little spicy???</p>

<p>Share your favorite-always-turns-out-great (unless you burn the chicken!) chicken on the grill recipe!</p>

<p>My family’s favorite is a simple one that I’ve been making for years. The measurements are not really specific and will depend on how many pieces of chicken you’re doing but you can adjust for your particular needs. </p>

<p>Olive oil
Chili powder
Sugar
Salt</p>

<p>I coat the chicken with olive oil and sprinkle each piece with a combination of the next 3 ingredients. Allow to sit for a half hour, then turn and sprinkle the other side so that each piece is covered. A couple members of our family like it with extra chili powder so you can accomodate individual tastes for something a little more spicy. </p>

<p>This is also good for making a chicken caesar. Easy and yummy!</p>

<p>Alwaysamom, that’s interesting! Is there much heat??? (spicy) So if you were making 4 good sized chicken breasts, what kind of quantities of each item would you use?</p>

<p>Mine isn’t really a marinade…</p>

<p>I just take boneless chix breasts
spray each side lightly with Olive Oil Pam
sprinkle some granulated garlic on both sides - not too much
then give a good sprinkling of Weber Kick’n Chicken seasoning…not just a little bit…a good sprinkling on both sides.</p>

<p>Let it all sit for a couple of minutes, then cook it. I typically use my Cuisinart Griddler, but if I were to use an outdoor BBQ, I’d cook them using indirect heat.</p>

<p>But I have to admit – I have never tried it on the grill. I’m sure it would be fine. Lots of flavor. And really easy.</p>

<p>It’s not spicy, but in the spirit of things collegiate, how about the famous Cornell recipe?</p>

<p>CORNELL CHICKEN MARINADE</p>

<p>Marinade:
1 cup oil
1 egg
2 cups vinegar (or cider vinegar)
3 tablespoons salt
1 tablespoon poultry seasoning
1 teaspoon black pepper </p>

<p>Chicken breasts or other chicken pieces</p>

<p>Put egg and oil into a blender and blend until smooth. Add vinegar, continuing to blend. Add seasonings. </p>

<p>Place chicken in an airtight container. Pour mixture over chicken and marinate for 3 to 24 hours. Remove chicken from marinade and cook over grill until done. Bring marinade to a boil and use to baste the chicken while cooking.</p>

<p>In South Orange County CA, we grill 3 times per week year-round. This recipe is the one I use the most. My family and guests love it! </p>

<p>A really, really easy one, that’s great if you are doing a lot of chicken</p>

<p>Buy a bottle of Good Seasons Zesty Italian pour it over boneless chicken breast, let sit for 4-6 hours, grill.</p>

<p>My go-to marinade for chicken is SO easy…Kraft Zesty Italian Dressing (& marinade). Put chicken in zip-lock bag, dump in some of the dressing, moosh it around so the chicken is nicely coated. Refrigerate for a couple of hours (more if you have the time), turning and re-mooshing every half hour, if you remember. Grill, baste with remaining marinade, if desired, and enjoy! I’ve had a number of guests ask me for the recipe… Yummmm!</p>

<p>My favorite marinade for just about any meat is a variation on the Italian dressing one used above. Mix some Italian dressing, I use the cheap, Kroger brand since I’m doctoring it up. Add some Lawry’s seasoning salt, oregano, chopped garlic and a little water and marinade anything. Have been using this for 30 years and my family complains if I try something else.</p>

<p>The chili powder gives it a lot of flavor, and for those who like more heat, I pretty much sprinkle enough all over each chicken piece so that it looks totally red! For 4 large chicken breasts, I’d probably use 2-3 tbsp of olive oil, 1 tsp of sugar and 1 tsp of salt. </p>

<p>I should add that you can also do these in the oven. Bake at 350 on parchment paper for 35 minutes. Great either way.</p>

<p>The allrecipes.com recipe looks really good and a little different. Maybe I could add a spice to give it a little heat, though it looks good “as is”. Don’t have sesame oil though…what could I substitute?</p>

<p>Not a marinade, really, but a coating…for boneless breasts…</p>

<p>Equal parts of Oil, Worcestershire, Dijon Mustard (maybe 1T each for 3 breasts). Salt & Pepper to taste, and some Red Hot sauce (Frank’s or Tabasco), also to taste - so you can add the heat here if you want. Brush over chicken and grill. I usually put more on as I turn the chicken. My family loves it…</p>

<p>Picked up at Costco last week “Mango Pineapple Tequilla Marinade”. OMG - like a luau in a bottle! Also had visible flakes of red pepper, so it had a nice kick. Used it on chicken thighs. My doubting husband was convinced.</p>

<p>PS - my typical marinade is Ken’s Zesty Italian dressing.</p>

<p>Abasket…I would not sesame oil with anything else. It adds a very specific taste. Buy some and you will enjoy using it with other recipes. One of my favorites (and VERY easy)</p>

<p>Rice Vinegar (about 1/4 cup)
dash of soy
teaspoon sesame oil</p>

<p>toss thinly sliced cucumbers in this sauce just before serving</p>

<p>Goes great with BBQ.</p>

<p>This is my go-to grilled chicken marinade - a modification from a Silver Palate recipe. It’s always a winner.</p>

<p>Ginger Sesame Soy Marinade
(makes ~1-1/2 cups of marinade)</p>

<p>1 cup soy sauce (low-sodium also works well)
1/4 cup lemon juice
2-3 Tbsp packed brown sugar (alternate: honey)
2-3 cloves chopped garlic
2 Tbsp chopped fresh ginger root
1/4 cup cooking oil
2 Tbsp sesame oil
ground black pepper to taste</p>

<p>optional: salt to taste
crushed red pepper flakes would be good for a spicy ‘kick’</p>

<p>just an FYI - soy sauce & worcestershire sauce both contain gluten, so be aware if anyone that will be eating is gluten-intolerant. (yes, you can get tamari sauce, which is a GF substiture for soy sauce).</p>

<p>Equal parts of Italian salad dressing (not the reduced calorie) and reconstituted lemon juice. Marinate in fridge for 4 to 5 hours.</p>

<p>My kids favorite is a spice blend mixed with a couple of tablespoons of vegetable oil. It is a mix of chili powder, garlic powder, onion powder, cumin, cayenne pepper, oregano, salt and pepper. It is a variation of “Big Daddy’s Rub” from the Food Network site. The recipe is for a grllled chicken pizza. I rarely make the pizza but just make the chicken.
I also sometimes use bottle salad dressing. My D likes to use the Giralds chinese chicken salad dressing as a marinade.
Another marinade I like it olive oil, lime juice, garlic with mint or parsley.</p>

<p>raw egg, vinegar(1pt), oil(3pt), salt, and oregano-par boil chicken and marinate for 3 hr. Yummy</p>
