@ivvcsf - No, hubby did not care for my suggestion for “prosciutto avacado salad with a grapefruit sesame oil dressing”. I may make it for myself this week.

Like other grapefruit and avocado salad recipes, it sounds odd but what we’ve tried is delicious. And an unexpected flavor combo.

I had a nice breakfast this morning. I sauteed onions, broccoli, spinach and kale, adding a bit of tamari at the end. Topped it with a fried egg, some sea salt, and red pepper flakes. Delish.

I like the sound of breakfast from @taverngirl .

It reminds me to mention that for breakfast (or lunch or dinner) you can use an egg to stretch a small amount of leftovers. Fried or scrambled or omlette is nice, but usually I just poach for 30 seconds in the microwave in a custard cup or coffee mug with napkin on top to prevent splatter. It could be restaurant doggy bag (chinese food etc) or home cooked leftovers.

Fritatas: always a hit in our house. You can go vegetarian and throw in just whatever veggies you have on hand. You can also add bacon or sausage. Fritatas are good cuz they’re cheap and very easy because you can just use what you have on hand.

Quiche: another hit in our house and another dish where you can throw in whatever you have on hand. If you don’t have crust, you can do crustless. If you want to be fancy, I have a great recipe for goat cheese quiche with a hash brown crust!

Chilaquiles and Huevos Rancheros: if you want to spice things up, these Mexican dishes are fun for breakfast

Bagel Bar: Great if you’re entertaining for breakfast and brunch and always a crowd pleaser

Scrambles: easy, cheap, and another recipe where you can use what you have on hand

Adding in a couple new savory breakfast dishes I’ve had lately to the thread:

Grilled cheese w/dipping jam-preserves
We had grilled cheese and tomato basil soup for dinner last night and I only add 1/2 of my 3-cheese on Dave’s Killer Bread sandwich. Saved the rest and had it this morning - instead of dunking in soup I “dunked” in a mixed fruit berry preserve. Amazing.

Eggs and leftover grains (rice, quinoa, couscous)
Leftover grains from dinner? Top with a fried or over easy egg or two and some fresh herbs and your favorite hot sauce.

I tried avocado toast for the first time. I took some good whole grain bread and a clove of garlic pealed and cut in half and rubbed the toast with the garlic. I took half an avocado and mashed it up cut up some tomato and some prefried bacon then spread it on the toast. Quite tasty. It took less than 10 minutes to prepare.

You can make them ahead of time and reheat in the morning. Use whatever veggies you like or have - same with the cheese (she has used cheddar or mozz).

@abasket - Helpful ideas - thanks. We sometimes buy fresh herbs for a recipe but throw the rest out because I forget to use them. Never thought about them for breakfast.

@lvvcsf - I often have avocado toast for lunch but recently inspired by this thread tried it for breakfast. I may need to try using a garlic clove on the toast. I used to use chopped garlic from a jar but switched to using everything bagel season instead (not good for folks that are low sodium). Other things I have added include chia seeds and 1T hummus (or tzantzik) and halved cherry tomatoes on top.

@kiddie - That muffin tin omelette recipe looks good!

Today’s breakfast was a microwaved sweet potato topped with a little butter, some plain greek yogurt and a bit of fresh parsley. I suppose I could go a lot of directions with this one. I could see topping it with arugala, bacon, or any number of things. Quick and easy. I am not a fan of sugar on sweet potatoes though my wife loves it. For me this is a sweet (from the potato) and savory dish.

I had a slice of avocado toast for lunch today with radishes, red onions, bell pepper, arugula and mini heirloom tomatoes. I put salt and pepper on it and ate it with a knife and fork. It was a perfect lunch with my tangerine for dessert.
